Cellentani pasta tossed in a gouda and cheddar cream sauce. Comfort food at its best!

Mac N’ Cheese

Macaroni and cheese is a comfort food favorite in any home. You can never go wrong with a gooey cheese sauce mixed with your favorite pasta. My go to pasta is Cellentani, also known as corkscrew, pasta. It is a slender, spiral shaped pasta that has ridges on the exterior. The ridges allow the sauce to stick to the pasta. Add 5 cups of pasta to boiling salted water.

While the pasta is cooking, grab the blocks of gouda and sharp cheddar cheese and shred them with a cheese grater. Block cheese is better for making cheese sauce instead of pre-shredded cheese since the pre-shredded cheese includes chemicals, which takes longer to melt.

The next part is the fun part……..making the roux for the cheese sauce! Add your butter to a sauce pan, make sure your pan is large enough to hold the sauce and the pasta. While your butter is melting, you are going to add the flour and immediately start whisking.

Continue whisking the flour into the butter until it turns into a paste that is smooth.

Once it has turned into a paste, slowly add a small amount of milk and whisk into the flour. After it has been mixed in, pour the remainder of the milk into the pot.

Add 1/2 of the shredded cheese to the pot. The other half of the cheese will go on top of the mac n’ cheese before it is put in the oven. Once the cheese melts, the sauce will get thicker and it will be ready to pour over the pasta.

Drain the pasta noodles and mix in with the cheese sauce.

Pour the mixed pasta and cheese sauce into an oven safe casserole dish. Cover the mac n’ cheese with the remaining shredded cheese.

Put the oven on broil at 500 degrees. Leave in the oven for about 3-5 minutes or until the top is golden brown.

Take it out of the oven and it is ready to eat!

Ingredients

Mac N' Cheese
  • 5 cups of pasta of your choice
  • 2 1/2 cups of shredded gouda cheese
  • 2 1/2 cups of shredded sharp cheddar cheese
  • 4 cups of Whole Milk 
  • 4 tbsp of butter
  • 3 tbsp flour
  • 1 tsp salt 
  • 1/2 tsp pepper 

Instructions

  1. Cook pasta according to the package.
  2. Add butter to pan. Once the butter has melted, whisk in the flour. Continue whisking until it has turned into a yellow paste. 
  3. Slowly add milk while continuing to whisk. Add the remaining of the milk.
  4. Add 1/2 of the shredded cheese to the pot. Reserve the other half of the cheese to add to the top. 
  5. Once the cheese had melted and the sauce has thickened, drain the pasta. Mix the pasta in the cheese sauce.
  6. Add the mixed pasta into an oven safe casserole dish. Add the remainder of the shredded cheese to the top of the pasta. Turn the oven on broil at 500 degrees. Put the mac n' cheese in the oven for 3-5 minutes or until the top has melted and turned golden brown.
  7. Take out of the oven and it is ready to eat! Be careful when taking out of the oven, it will be hot!
