Shrimp Quesadillas

When you combine shrimp, peppers and cheese, you are sure to create a delicious dish! I came up with this recipe on a random day. I wanted some latin food but I also wanted seafood, so I decided to make some quesadillas. You can add more veggies to this dish but I used alot of bell peppers. My daughter loves bell peppers so she insisted that it included both red and green bell peppers. I started by dicing the onions and bell peppers.
Once the veggies are diced, saute them with butter in a pan until they are soft.
While your veggies are cooking, its time to peel the shrimp. I peeled 20 shrimp and diced them in 3 smaller pieces.
Once the veggies have cooked, remove them from the pan and put them on a separate plate. Add more butter to the pan, seasonings and add the shrimp. Cook the shrimp until they are opaque, slight pink.
Once the shrimp is cooked, add the veggies to the same pan.
Now its time to assemble the quesadillas. Use the burrito size tortillas. Melt butter on a flat top pan and add the quesadilla.
Once it is heated, add the shrimp, veggies and cheese. Once the cheese has started to melt, flip the quesadilla on the other side and then its done.
Once they are golden brown on both sides, its time to eat! Pair them with your favorite salsa and sour cream. ENJOY!
Shrimp Quesadillas
Ingredients
- 1 lb of large raw shrimp
- 4 burrito size tortillas
- 1 green bell pepper
- 1 red bell pepper
- 1/2 yellow onion
- 1 tsp Adobo seasoning
- 1 tsp paprika
- 1/2 tsp cayenne
- 1/2 tsp parsley flakes
- 1 tsp garlic salt
- 4 tbsp butter
- 2 cups monterey jack cheese
Instructions
- Dice the bell peppers and onion.
- In a saute' pan, add 2 tbsp butter and the peppers and onion.
- Cook the veggies until they are soft.
- While the veggies are cooking, peel the shrimp and cut each one into thirds.
- Once the veggies are done cooking, add 1 tbsp of butter to the same pan and add the shrimp.
- Cook the shrimp until it turns a light pink color.
- Add the veggies to the same pan.
- On a flat skillet, add 1 tbsp of butter and one burrito. Once the burrito is heated, add the shrimp, veggies and cheese to half of the burrito.
- Once the cheese begins to melt, flip the other half to cover the shrimp, cheese and veggies.
- Once the bottom is brown, flip the quesadilla to the other side.
- Once both sides are golden brown, they are ready to eat!
- Repeat the steps for each buritto. Add more butter to the flat skillet to keep the golden brown color on the quesadillas.
