Marry Me Chicken Pasta

Since Valentine’s Day is coming up, I figured I would make my version of the “marry me chicken” that was very popular on social media last year. I decided to turn my recipe into a pasta dish instead of serving the chicken with a different side dish. After eating this pasta, you will understand why its called “marry me chicken”. It is so flavorful and delicious! My Husband was ready to eat the entire pot but I wouldn’t let him LOL. You might ask yourself, “what is the difference between Tuscan Chicken and Marry Me Chicken?” and the main difference is using wine. Tuscan Chicken calls for a dry white wine in the sauce and Marry Me Chicken does not, it is normally made with only heavy cream and no wine. The taste is different but similar. This is my warning to you….this pasta is addictive!!!! I used 2 boneless, skinless chicken breasts but you could use chicken thighs instead.

Season the chicken breasts with 2 tbsp of onion powder, 2 tbsp of garlic powder, 2 tbsp of paprika, 1 tbsp of cajun seasoning, 1 tbsp of garlic salt and 1 tbsp of dried parsley flakes. Make sure each chicken breast is fully seasoned.

Add 1 tbsp of olive oil and 1 tbsp of butter to a skillet. Once the olive oil is hot and the butter has melted, add the chicken breasts. Cook 3-5 minutes on each side or until the chicken is fully cooked and set aside.

Allow the chicken to rest for about 3-5 minutes and then cut it into small strips and set aside.

In the same pan, add 1 tbsp of butter, 1 tbsp of minced garlic and 1 cup of sundried tomatoes and stir.

Add 1 cup of heavy cream and 1/2 cup of chicken stock and stir well.

Add 1/2 cup of shaved or shredded parmesan cheese and 1 cup of fresh spinach and stir well.

Cover the pan with a lid and cook 8-10 minutes or until the sauce starts to thicken.

Remove the lid and stir the sauce. Season with salt & pepper (to taste) Optional: for some added heat, add 1/2 tsp of red pepper flakes to the sauce. Add in your favorite pasta (about 3-4 cups) and stir well.

Add the cooked chicken on top of the pasta. Serve with salad and garlic bread for a complete meal. Serve and ENJOY!

Fall in love with this one-pot pasta dish! Penne pasta tossed in a savory cream sauce with sundried tomatoes and spinach and topped with juicy chicken breast.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 3-4 cups of cooked pasta of your choice
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp paprika
  • 1 tbsp cajun seasoning
  • 1 tbsp garlic salt
  • 1 tbsp dried parsley flakes
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp minced garlic
  • 1 cup sundried tomatoes
  • 1 cup heavy cream
  • 1/2 cup chicken stock
  • 1/2 cup shaved OR shredded parmesan cheese
  • 1 cup fresh spinach
  • salt & pepper (to taste)
  • Optional: 1/2 tsp red pepper flakes

Instructions

  1. Cook your pasta of choice according to the package directions and set aside.

  6. Add heavy cream, chicken stock, parmesan cheese and spinach and stir well. Cover the pan with a lid and cook 8-10 minutes or until the sauce starts to thicken.
  7. Remove the lid and stir. Season with salt & pepper (to taste) and stir. Optional: for some added heat, add 1/2 tsp of red pepper flakes to the sauce. Add your cook pasta and stir.
  8. Make sure the pasta is coated in the sauce. Taste to make sure it is seasoned to your liking.
  9. Add the cooked chicken on top of the pasta. Garnish with more parmesan cheese and parsley. Serve and ENJOY!
