Lobster Bites

Lobster Bites

Normally, whenever you are eating lobster, it is a whole lobster or tail that is steamed or oven baked with butter and herbs. Well, I wanted to do something different. Everything is good fried and that includes lobster! These little bite sized pieces of lobster is an explosion of flavor in your mouth. You can pair it with a sweet chili sauce or ranch. For this recipe, I used 4 smaller lobster tails but if you can find 1 large lobster tail, that will work as well.

De-shell the lobsters by using some cooking shears to cut them right down the middle. Once cut, remove the shells.

Once you have removed all of the shells, wash and cut the lobster meat into bite sized pieces.

In a separate bowl, add 2 eggs and whisk well.

Season the lobster meat with 1 tbsp of cajun seasoning, 1 tbsp of garlic powder, 1 tbsp onion powder and 1 tbsp of paprika. Pour the egg onto the seasoned lobster and mix. Make sure each piece is fully coated in the egg batter.

In a separate bowl, add 2 cup of flour and season with 1 tbsp of cajun seasoning. Add the lobster to the flour and make sure each piece is fully coated in flour.

Add 2-3 cups of vegetable oil to a cast iron skillet. Once the oil is hot and reaches 350 degrees, add the lobster meat to the skillet. Do not over crowd the skillet or your lobster will start to boil and not fry.

Cook 3-5 minutes or until the lobster is golden brown. Remove and set aside to drain any excess oil.

Once all of the lobster is cooked, serve with your favorite dipping sauce and ENJOY!
