Italian Sausages & Peppers

Anytime I am on low carb diet, this is my go-to dish. Italian sausage smothered down in a tomato sauce…..yum! If you aren’t on a low carb diet, this goes great served over rice. If you don’t want to use Italian sausage, you could use a chicken sausage as well. You will still get the great flavors. Get 1 pound of Italian sausage and cut them into 1-2 inch pieces. You can use mild or hot sausages, they both work well.

To brown the sausage, add 1 tsp of vegetable oil to the pan Once the pan is hot, add the sausage. To the sausage, add 1 tbsp onion powder, 1 tbsp garlic salt, 1 tsp Accent and 1 tsp cajun seasoning.

While the sausage is browning, slice 1 green and red bell pepper into thin strips, or julienne style.

Add the bell peppers and 1 14.5 oz can of diced tomatoes to the pan.

Since tomatoes are high in acid, add 1/2 tsp of sugar to cut the acidity. Stir well and cover. Cook for 20-25 minutes or until the veggies are soft and the tomatoes have reduced.

Serve as-is or over rice. ENJOY!

Italian sausages cooked with bell peppers in a flavorful tomato sauce.
Prep time: 10 MinCook time: 20 MinTotal time: 30 Min

Ingredients

  • 1 lb Italian sausage
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 tsp vegetable oil
  • 1 tbsp onion powder
  • 1 tbsp garlic salt
  • 1 tsp Accent
  • 1 tsp cajun seasoning
  • 1 14.5 oz can diced tomatoes
  • 1/2 tsp sugar

Instructions

  1. Cut the Italian sausages into 1-2 inch pieces.
  2. Add vegetable oil to a pan. Once it is hot, add the sausages.
  3. Add onion powder, garlic salt, Accent and cajun seasoning to the sausages and stir.
  4. While the sausages are browning, slice the bell peppers julienne style (thin slices) and add them to the pot.
  5. Add 1 can of diced tomatoes. 
  6. Stir and add 1/2 tsp of sugar to the pot. 
  7. Stir and cover. Cook for 20-25 minutes on med heat or until the veggies are soft and the tomatoes have reduced.
  8. Eat as-is or serve over rice. 
  9. ENJOY!
