Vegetable Stir Fry

I am not a big vegetable eater, so whenever I know that I must eat veggies, I always make sure to add extra flavors. Zucchini and squash are my go-to since they can be cooked many different ways. I have loved squash since I was a kid. My mom and grandma would always cook fried squash after a hard day working on my grandma’s pig farm. Anything tastes great when it is fried and squash is no exception. My daughter loves bell peppers, all colors, so whenever I need for her to eat veggies, I make sure to throw in some bell peppers. Cut 1 whole squash, zucchini, red bell pepper and 1/2 onion.

To a pan, add 1 tbsp of olive oil. Once the pan is hot, add the onions. Cook the onions first since they take longer to cook since the other veggies.

Cook for 5 minutes or until the onions have start to softened. Add the other veggies.

Stir well and add 1/4 cup of soy sauce, 1 tbsp minced garlic and 1 tbsp of sweet chili sauce. If you like sauce on the sweeter side, you can add an additional tbsp of sweet chili sauce.

Stir well and cook 5-7 minutes or until the veggies are al dente’. You don’t want to overcook the veggies or they will be mushy.

Eat as-is or serve over rice. ENJOY!

Delicious vegetable stir fry that you wont feel guilty about eating. Sweet, salty and spicy flavors make these vegetables a hit!

Ingredients

  • 1 zucchini
  • 1 squash
  • 1/2 onion
  • 1 red bell pepper
  • 1/4 cup soy sauce
  • 1 tbsp sweet chili sauce
  • 1 tsp minced garlic
  • 1 tbsp olive oil

Instructions

  1. Chop the zucchini and squash and slice the onion and bell pepper into thin slices.
  2. Add olive oil to a pan. Once the pan is hot, add the onions.
  3. Cook for 5 minutes or until the onions are almost soft.
  4. Add the remaining veggies to the pan.
  5. Add the minced garlic, soy sauce and sweet chili sauce. 
  6. Stir and cook for 5-7 minutes or until the veggies are al dente'. 
  7. Serve as-is or over rice.
  8. ENJOY!
