Vegetable Stir Fry
I am not a big vegetable eater, so whenever I know that I must eat veggies, I always make sure to add extra flavors. Zucchini and squash are my go-to since they can be cooked many different ways. I have loved squash since I was a kid. My mom and grandma would always cook fried squash after a hard day working on my grandma’s pig farm. Anything tastes great when it is fried and squash is no exception. My daughter loves bell peppers, all colors, so whenever I need for her to eat veggies, I make sure to throw in some bell peppers. Cut 1 whole squash, zucchini, red bell pepper and 1/2 onion.
To a pan, add 1 tbsp of olive oil. Once the pan is hot, add the onions. Cook the onions first since they take longer to cook since the other veggies.
Cook for 5 minutes or until the onions have start to softened. Add the other veggies.
Stir well and add 1/4 cup of soy sauce, 1 tbsp minced garlic and 1 tbsp of sweet chili sauce. If you like sauce on the sweeter side, you can add an additional tbsp of sweet chili sauce.
Stir well and cook 5-7 minutes or until the veggies are al dente’. You don’t want to overcook the veggies or they will be mushy.
Eat as-is or serve over rice. ENJOY!

Ingredients
- 1 zucchini
- 1 squash
- 1/2 onion
- 1 red bell pepper
- 1/4 cup soy sauce
- 1 tbsp sweet chili sauce
- 1 tsp minced garlic
- 1 tbsp olive oil
Instructions
- Chop the zucchini and squash and slice the onion and bell pepper into thin slices.
- Add olive oil to a pan. Once the pan is hot, add the onions.
- Cook for 5 minutes or until the onions are almost soft.
- Add the remaining veggies to the pan.
- Add the minced garlic, soy sauce and sweet chili sauce.
- Stir and cook for 5-7 minutes or until the veggies are al dente'.
- Serve as-is or over rice.
