Strawberry Cake Cookies
Who says you cant turn cake into cookies? NOT ME!!! I love cake cookies!!! They are chewy and delicious! When you add cream cheese icing and fresh strawberries, your stomach will be very happy. This is another easy dessert that is great to make with your kids. If you are not a fan of strawberries, you can make this recipe using any cake mix. Grab your favorite cake mix and pour it into a bowl.
Add 2 eggs and 1/3 cup of vegetable or canola oil. Mix well.
Using an ice cream scoop, scoop about golf ball sized amount of batter into your hand and roll. Put them on a baking sheet lined with parchment paper. Repeat until all of the batter is used. Put into a 350 degree oven for 10-12 minutes. Once they are cooked, let them cool.
For the icing, add 1 4oz block of cream cheese to a bowl.
Add 1/2 cup of powdered sugar, 1/4 tsp of vanilla and 1/4 cup of milk. If you want your icing thicker, add less milk, about 3 tbsps. Mix well using a whisk.
Pour 2-3 tbsp of icing on each cookie.
Top with fresh strawberries and serve. ENJOY!

- 1 box of strawberry cake mix
- 1/3 cup of vegetable or canola oil

- 1 4 oz block of cream cheese
- 1/2 cup of powdered sugar
- 1/4 tsp of vanilla
- 1/4 cup of milk (or 2-3 tbsps of milk for a thicker icing)
Instructions
- In a bowl, add the cake mix, eggs and vegetable oil and stir.
- Scoop golf ball size batter into your hand and roll.
- Add to a baking sheet lined with parchment paper.
- Bake at 350 degrees for 10 minutes.
- Remove from the oven and cool.
- In a bowl, add cream cheese, powdered sugar, milk and vanilla.
- Mix well using a whisk.
- Pour 2-3 tbsps of icing on each cookie.
- Top with fresh strawberries and serve.
