Homemade Greek Salad
If you love a delicious and refreshing salad, well this is definitely the one for you! Greek Salads and Caesar salads are my go-to salads. There are so many flavorful ingredients mixed in, after awhile, you will forget you are eating a healthy salad. This is my favorite during the summer time since it is light and refreshing. I promise you, this is extremely easy! I am not a fan of iceberg lettuce, unless I am eating a burger, so for salads, I always you Romaine lettuce. If you do not have a salad spinner, now is the time to get one. Cut and wash 1 head of Romaine lettuce.
The veggies in this salad are cucumbers, green bell peppers, tomatoes, red onion and Kalamata olives. Kalamata olives are a dark purple olive with a smooth texture. They aren’t as salty as normal green olives. Wash and chop the vegetables. 1 whole cucumber, 1 tomato, 1/2 cup of Kalamata olives, 1/2 cup sliced red onion and 1/2 cup green bell pepper.
Here comes the fun part……the dressing!!!!! After you make this dressing, you will probably want to put it on all of your salads. Grab 1/3 cup of olive oil, 3 tbsp red wine vinegar, 1/2 tsp minced garlic, 1 tsp dried oregano 1 tsp salt and 1/2 tsp black pepper and it all to a bowl. Stir well using a whisk.
Add all of your veggies to a bowl. Add the lettuce first, then the remaining veggies. Also add 1/2 cup of Feta cheese.
Pour the dressing over the salad and toss using salad spoons or tongs.
Mix well and serve! For extra flavor, squeeze some lemon on top. ENJOY!

Ingredients
- 1 head of Romain lettuce
- 1 cucumber
- 1/2 cup feta cheese
- 1/2 cup Kalamata olives
- 1/2 cup sliced red onion
- 1/2 cup green bell pepper
- 1 tomato
- 1/3 cup olive oil
- 3 tbsp red wine vinegar
- 1/2 tsp minced garlic
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Chop and wash the Romaine lettuce.
- Wash the veggies and slice the cucumber into half moons.
- Thinly slice the red onion.
- Chop the bell peppers.
- Dice the tomatoes.
- Put the lettuce in a bowl and then the veggies on top. Also add the Kalamata olives and feta cheese.
- Pour the dressing over and mix together with the salad.
- In a bowl, add the olive oil, red wine vinegar, minced garlic, oregano, salt and pepper.
- Whisk well and pour over salad.
- Serve and ENJOY!
