Banana Pudding Cheesecake Bars
In my family, I am known for making the banana pudding for the holidays. This year, I decided to mix it up and combine it with cheesecake. I can definitely say this was an extremely popular creation. My family went crazy over these bars. It is an easy recipe and I am not a baker. So you know this has to be an easy dessert. For the crust, I crushed 2 cups of Vanilla Wafers using a food processor.
In a bowl, add the crushed vanilla wafers and 1 stick of melted butter and stir.
In a 9 inch pan, add some wax paper and pack down the crust to cover the bottom of the pan.
Put in a 350 degree oven for 8 minutes.
In a bowl, smash 2 bananas and 2 8 oz packages of cream cheese
Using a mixer, mix the cream cheese and bananas well. Add 2 eggs, 2 cups of milk and 1 5.1 oz package of Banana Cream instant pudding mix. Mix well.
Add 1 cup of sugar and 1/3 cup of flour. Mix well until smooth.
Pour filling into the vanilla wafer crust. Add to a 350 degree oven and bake for 1 hour and 15 minutes or until the middle is completely cooked and not jiggly.
Remove from the oven and let it cool for 30 minutes.
Cut the edges off and cut the cheesecake into bars.
Top with vanilla wafers, whipped cream and drizzle with caramel sauce. Serve and ENJOY!

Ingredients
- 2 cups of Vanilla Wafers
- 1 stick of melted butter
- 2 eggs
- 2 cups of whole milk
- 1 cup of sugar
- 2 8 oz packages of cream cheese
- 1/3 cup of flour
- 1 5.2 oz box of Banana Cream Instant Pudding Mix
- 2 bananas
Instructions
- Using a food processor, crush the vanilla wafers.
- Add them to a bowl and add the melted butter.
- Stir and pack the vanilla wafers in a 9 inch baking pan lined with wax paper.
- Put in a 350 degree oven for 8 minutes.
- In a bowl, add 2 mashed bananas and 2 packages of cream cheese. Mix well using a whisk.
- Add 2 eggs, the banana cream instant pudding mix and milk. Mix well.
- Add sugar and flour. Mix well until it is smooth and creamy.
- Add the mixture to the vanilla wafer crust.
- Put in a 350 degree oven and cook for 1 hour and 15 minutes or until the cheesecake is fully cooked and not jiggly.
- Let it cool for at least 30 minutes.
- Cut the edges off and cut the cheesecake into bars.
- Top with whipped cream, bananas and a caramel drizzle.
- Serve and ENJOY!
