Creamy Tuscan Salmon
Need a flavorful and easy salmon dish??? This is definitely the one!!!! I know some people may not be fans of salmon with cheese, but I promise you, this dish will change your mind. Its also very easy to make and you know I am all about EASY. In normal “Tuscan” dishes, it includes spinach and fresh tomatoes but I love sun dried tomatoes. It adds a sweet and tart flavor to the dish. If you are not a fan of sun dried tomatoes, feel free to use fresh cherry tomatoes instead. Start by cutting a whole salmon into 4-5 filets. Wash and season each filet with 1 tsp of garlic salt, 1 tsp onion powder and 1 tsp of paprika.
In a pan, add 1 tbsp of olive oil. Once the olive oil is hot, add the filets to the pan. Cook 3-5 minutes on each side.
Once the salmon is cooked on each side, remove and add to a plate. In the same skillet, add 1 tbsp of butter and 1 tsp minced garlic.
Once the butter has melted, add 2 cups fresh baby spinach and 1 cup of sun dried tomatoes and stir.
Add 1 1/3 cup of heavy cream and 1/3 cup of grated parmesan cheese and stir.
Stir and season with 1 tsp salt and 1 tsp black pepper. Cover with a lid and cook for 10 minutes or until the sauce has started to thicken.
Add the salmon back to the pan and cover with a lid. Cook 5-7 more minutes and top with fresh parsley. Serve with mash potatoes or pasta for a complete meal. ENJOY!

Ingredients
- 4-5 Salmon Filets
- 2 cups baby spinach
- 1 tsp minced garlic
- 1 tsp fresh parsley
- 1 tsp garlic salt
- 1 tsp onion powder
- 1 tsp paprika
- 1 1/3 cup heavy cream
- 1/3 cup grated parmesan
- 1 cup sun dried tomatoes
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Wash and cut a whole salmon into 4-5 filets
- Season each filet with 1 tsp of garlic salt, paprika and onion powder.
- In a pan, add the olive oil. Once the olive oil is hot, add the salmon filets.
- Cook 3-5 minutes on each side.
- Once the salmon is cooked, remove from the pan and set aside.
- Add 1 tbsp of butter and 1 tsp minced garlic to the pan.
- Once the butter has melted, add the baby spinach and sun dried tomatoes.
- Stir and add the heavy cream.
- Season with salt and pepper (to taste).
- Cover the pan with a lid and cook for 10 minutes or until the sauce starts to thicken.
- Add the salmon back to the pan and cover and cook for 5-7 more minutes.
- Serve with mashed potatoes or pasta.
