Carrot Cake Waffles

My Hubby’s favorite cake is carrot cake and he loves whenever I make carrot cake pancakes, but this time he asked for waffles. He ate all of them! These waffles are perfect for brunch or breakfast. The cream cheese syrup brings out the flavors in the carrot cake waffles. Feel free to make them from scratch, but you know me, I like simple and easy. This recipes calls for the “just add water” waffle/pancake mix. Finely chop 1/3 cup of pecans and shredded carrots.

In a bowl, add 2 cups of “just add water” waffle/pancake mix, 1 tbsp of cinnamon, chopped pecans, chopped shredded carrots, 1/2 tbsp of sugar and 1 1/3 cup of milk. Mix well.

Spray your waffle maker generously with canola oil or butter. Pour about half of the batter into the waffle maker (depending on the size of your waffle maker). Cook the waffle until it is brown on both sides. Repeat steps until all of the batter is used.

In a bowl, add 1/2 block of softened cream cheese. To soften it, you can heat it up in the microwave for 30 seconds.

To the cream cheese add 1/4 cup of powdered sugar, 1/4 cup of milk and 1/2 tbsp of maple syrup. Whisk well until it is smooth and creamy.

Pour the cream cheese syrup on top of the waffles. Top with extra pecans and shredded carrots. Serve and ENJOY!

Ingredients

Carrot Cake Waffles
  • 2 cups waffle/pancake mix
  • 1 tbsp cinnamon
  • 1/3 cup chopped pecans
  • 1/3 cup chopped shredded carrots
  • 1/2 tbsp sugar
  • 1 1/3 cup milk
Cream Cheese Syrup
  • 4 oz cream cheese
  • 1/4 cup powdered sugar
  • 1/4 cup milk
  • 1/2 tbsp maple syrup

Instructions

  1. Finely chop the shredded carrots and pecans.
  2. In a bowl, add the waffle/pancake mix, cinnamon, chopped pecans, chopped carrots, sugar and milk. Mix well.
  3. Spray your waffle maker generously with canola oil or butter. Fill your waffle maker with about 1/2 of the batter (depending on the size of your waffle maker).
  4. Cook until the waffles are brown on both sides. Remove from the waffle maker and set aside.
  5. Repeat steps until all of the batter is used.
  6. Top with the cream cheese syrup and extra pecans and carrots.
  7. Serve and ENJOY!
Cream Cheese Syrup
  1. In a bowl, add softened cream cheese, powdered sugar, milk and maple syrup.
  2. Whisk well until it is smoothy and creamy.
  3. Pour on top of the waffles.
  4. ENJOY!
