Shrimp Tostadas

My hubby and daughter LOVE whenever I make tostadas. I normally make them with ground beef but this time I wanted to use shrimp. They were absolutely delicious! It will be hard for me to eat tostadas with ground beef after eating these. The shrimp enhanced the flavor of the guacamole and it worked so well together. Plus, it is a cheap meal that you can get on the dinner table pretty quick. Feel free to get creative with the toppings. If you aren’t a fan of guacamole, you can use refried beans but its your choice. Peel and devein 1 pound of shrimp, which should be about 4 shrimp per tostada and this recipe makes 6 tostadas. Add 1 tbsp of butter to a pan and add the shrimp. Season with 1 package of Ortega Taco Seasoning. Cook 5-7 minutes or until the shrimp are fully cooked.

Pre-heat the oven to 350 degrees and add 6 Ortega Tostada Shells to a baking sheet. Heat 4-6 minutes in the oven. Remove them from the oven and set aside.

In a bowl, add avocados and mash them very well. You will need to have good ripe avocados or your guacamole will be chunky.

Once they are mashed up well and it is smooth, add 1/2 cup of diced tomatoes, 1/3 cup of diced red onion, 1/2 fresh jalapeño that has been diced, juice of 1/2 lemon and salt & pepper (to taste). Leave a few seeds from the jalapeño for some added spice. Mix well.

To assemble the tostadas, spread a layer of guacamole on the bottom and then top with 4 cooked shrimp, 1 tbsp of diced tomatoes, 1 tsp of diced red onion and sprinkle 1 tsp of queso fresco on top of each tostada.

Serve with your favorite side dish and garnish with fresh cilantro. Serve and ENJOY!

Crispy tortillas spread with homemade guacamole and topped with veggies and shrimp.

Ingredients

  • 6 tostada shells
  • 1lb shrimp (24 shrimp total)
  • 1 pack of taco seasoning
  • 1 tbsp butter
  • 1 whole tomato (diced)
  • 1/2 red onion (diced)
  • 3 avocados
  • 1/2 fresh jalapeno (diced)
  • juice of 1/2 lime
  • salt & pepper (to taste)
  • 6 tsp queso fresco
  • cilantro (garnish)

Instructions

  1. Peel and devein the shrimp.
  2. Add the butter to a pan and add the shrimp. Season with taco seasoning and follow the package directions.
  3. Cook 5-7 minutes or until the shrimp are fully cooked.
  4. Once the shrimp is fully cooked, remove from the pan and set aside.
  5. Pre-heat the oven to 350 degrees. Add 6 tostada shells on a baking sheet. Heat in the oven for 4-6 minutes.
  6. Remove from the oven and set aside.
  7. In a bowl, add the avocados and mash them up really well until they are smooth and creamy.
  8. To the mashed avocados, add 1/2 cup of diced tomatoes, 1/3 cup of diced red onions, diced jalapeño, lime juice and salt & pepper. Stir and taste to make sure it is seasoned to your liking.
  9. To assemble the tostadas, spread a layer of guacamole on the bottom and then top with 4 shrimp, 1 tbsp of diced tomatoes, 1 tsp of diced red onion and sprinkle 1 tsp of queso fresco on top of each tostada.
  10. Garnish with fresh cilantro. Serve and ENJOY!
