Refreshing Cucumber & Tomato Salad
Whenever you want something light and refreshing, this is the dish for you. This salad is quick and easy to make. The red onions, red wine vinegar and dill brings the dish all together. Grab a cucumber, red onion and 2 whole tomatoes.
For the cucumbers, I dont like to remove the skin completely, so I shave the skin off of two sides of the cucumber and keep the rest on. The nutrients are in the skin, so I make sure to keep some of it on the cucumber. As for the tomatoes, I cut them in halves, then fourths, then eighths and then chop them. Feel free to cut them anyway you prefer. I slice the red onion really thin, julienne style.
Once all of your ingredients are chopped, put them in a bowl with olive oil, red wine vinegar, garlic salt, pepper, fresh dill and regular salt. Stir and serve. ENJOY!
Cucumber & Tomato Salad
Ingredients
- 2 whole tomatoes
- 1 cucumber
- 1/3 cup of sliced red onion
- 1 tsp garlic salt
- 2 tbsp red wine vinegar
- 1/4 tsp salt
- 2 tsp olive oil
- 2 tbsp fresh dill
Instructions
- Cut the tomatoes and cucumbers and slice the red onion thinly (julienne style).
- Put all ingredients in a bowl.
- Add red wine vinegar, olive oil, garlic salt, fresh dill, and salt. Optional: top with fresh cracked black pepper.
- Stir and serve.
