Cilantro Lime Rice
Who can resist a good rice dish! Especially when you add flavors like lime and cilantro. This side dish can be paired with any meat. Its light, refreshing and easy to make! My recipe is used with Basmati Rice, my absolute favorite rice. Shout out to my friend Chan who turned me onto this rice. It is was definitely a game changer. If you dont want to use Basmati Rice, feel free to use the rice of your choice. Cook your rice according to the directions on the package. This recipe is for 2-4 servings, which is about 3-4 cups of rice.
Once the rice is cooked, add 1/3 cup of chopped cilantro and squeeze the juice of 2 limes in the rice. Add salt and pepper to taste.

Cilantro Lime Rice
Ingredients
- 3 cups of Basmati Rice (or the rice of your choice)
- 1/3 cup of cilantro
- 1/2 cup of lime juice (2 limes)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Cook rice according to the package directions. Optional: to add more flavor, cook the rice in chicken broth instead of water.
- Chop half of a bundle of cilantro leaves.
- Squeeze the juice of 2 limes.
- Add the lime juice, chopped cilantro, salt and pepper to the rice.
- Stir and serve!
