Out of all of the meals I have prepared, this is by far the most special to me. This was a dish that my mom and I made every Thanksgiving. This dish will always have a special place in my heart. The ingredients are simple but the flavors in this dish bring it to another level. My mom always taught me that cooking is not about the fancy ingredients you put into it, its about the love and the flavor from the food that you are cooking. A little goes a long way. The ingredient that takes these potatoes to another level are dried shrimp. Yes, dried shrimp. They are shrimp that have been sun-dried and shrunk to a small size. They are small in size but pack alot of flavor! Start off by chopping onion, green bell pepper and your favorite smoked sausage.
In a pot, add vegetable oil and let it get hot. Once the oil is hot, add the sausage, bell peppers and onions. While the sausage and veggies are cooking, peel, wash and dice russet potatoes. Cut the potatoes as small as you can get them. Be sure to keep them the same size so they can cook evenly.
Once the onions and bell peppers have softened, add the potatoes to the pan and stir. Making sure the potatoes are coated with the oil.
Cover and cook for 10 min and add 1/2 cup of water. Cover and cook on low-medium heat until the potatoes soften. Once they have soften, add the dried shrimp and seasonings.
Once the potatoes are soften and it is seasoned to your liking, serve with your favorite main dish or just grab a bowl and spoon and ENJOY!

Ingredients
- 1 5lb bag of russet potatoes
- 1 pack of smoked sausage
- 1 bell pepper
- 1/2 onion
- 1 pack of dried shrimp
- 1 tbsp cajun seasoning
- 1 tsp garlic powder
- 1 tsp of onion powder
- 1/2 cup water
- 1 tbsp vegetable oil
Instructions
- Dice the onion and bell pepper and cut the sausage in whole rounds then half moon shape.
- Heat vegetable oil in a pot. Once it is heated, add the onion, bell pepper and sausage. Stir the pot.
- While the sausage and veggies are cooking, peel, wash and dice the potatoes. Make sure the potatoes are cut in a similar size for even cooking.
- Once the veggies have soften, add the potatoes to the pot. Stir and make sure the potatoes are evenly coated.
- Once the potatoes have turned brown, add 1/2 cup water, garlic powder, onion powder and cajun seasoning.
- Cover and cook for 10 minutes.
- Stir the potatoes and add the dried shrimp.
- Cover and cook for another 15-20 minutes or until the potatoes are soft. Taste to make sure it is seasoned to your liking and then serve.
