Fried Pickles w/ Homemade Ranch Dressing

Anything deep fried is flavor goodness but whenever you add a salty, briny dill pickle, that brings it to another level! Whenever I make these, my daughter eats about 85% of them and leave my husband and I the rest to split. These are her fave! The ranch cools the salty flavor of the pickles and creates a magic combination. Everyone loves Ranch dressing and homemade dressing is even better. Here’s a funny story, before I had my daughter, I did not like ranch. I am not sure if it was the color, texture or taste, but I did not like it. During my pregnancy, all I wanted was ranch dressing and fried chicken sandwiches LOL. I didn’t understand it since I didn’t even like ranch! I just knew once I had my daughter that I would go back to disliking ranch, but nope, that didn’t happen. I love ranch, especially the ranch from the famous chicken wing restaurant. Whenever I decided I wanted to make my own, that would be my inspiration, with the taste, texture and color. After this recipe, you will agree that it tastes just like it! Grab your favorite jar of dill pickles. Make sure they are dill, bread & butter “sweet” pickles will not taste the same. In a bowl, add 1 cup of buttermilk.

Add one 16 oz jar of dill pickles to the buttermilk. Do not season the buttermilk or the pickles will be too salty. Pickles already have a lot of salt. Soak them in the buttermilk for 30 minutes.

In a separate container, add 1 1/2 cup of flour, 1 tbsp of garlic powder, 1 tbsp of onion powder, 1 tbsp cajun seasoning and 1 tbsp paprika. Mix well. Add the pickles and make sure each pickle is evenly coated. While you are coating the pickles, add 2 cups of oil to a cast iron skillet.

Once the oil is hot, add the pickles to the skillet. Cook 3 minutes on each side or until golden brown.

Once they have cooked, add them to a baking sheet lined with paper towels to allow the grease to drain.

In a bowl, add 1 pack of ranch seasoning, 2/3 cup buttermilk and 2/3 mayonnaise. Whisk well. If you want a thicker ranch, add more mayonnaise, 1 tsp at a time.
