Pineapple Upside Down Mini Cakes
These are individual versions of the famous pineapple upside down cake. I love these since everyone will have their own personal cake. Its moist and delicious! Did I mention they are easy to make? You know that I am allllll about easy and delicious. For this recipe I used a box cake mix. Please do not let anyone tell you that box cake mix is a bad idea because I promise you it is not. To make a box cake mix taste homemade, always add an extra egg, use milk instead of water and use melted butter instead of oil. There you go, thats the secret. For the caramelized glaze melt 4 tbsps of butter and mix well with 1/3 cup of brown sugar.
In a large bowl, add 4 eggs, 1 cup of pineapple juice and 1/3 cup of melted butter and whisk well.
Add 1 box of yellow cake mix of your choice and mix well.
In a jumbo 6 cup muffin pan, add 1-2 tablespoons of the brown sugar glaze on the bottom of each cup.
Add 1 pineapple slice to each muffin cup.
On top of the pineapple slices, add 1 maraschino cherry. Spray the cups with non-stick olive oil spray. Then add 2-3 tbsps of batter to the muffin cups.
Put into a 350 degree oven for 30 minutes.
Once you remove them from the oven, grab a baking sheet and carefully flip the pan over and slowly pull the pan up.
Serve with ice cream or eat them by itself. ENJOY!

Ingredients
- 1 package of yellow cake mix
- 1 cup pineapple juice
- 4 eggs
- 1/3 cup melted butter
- 6 pineapple slices
- 6 maraschino cherries
- 4 tbsps melted butter
- 1/3 cup brown sugar
Instructions
- Mix the brown sugar and the melted butter.
- In a bowl, add eggs, pineapple juice and melted butter. Mix well.
- Add the package of yellow cake and stir.
- In a jumbo sized muffin pan, add 1-2 tbsp of glaze.
- Add a pineapple slice and cherry to the cups.
- Spray each cup with non-stick olive oil spray.
- Add 2-3 tbsps of batter to each cup.
- Put in a 350 degree oven for 30 minutes.
- Once out of the oven, carefully flip the muffin pan onto a baking sheet.
- Slowly pull the muffin pan up.
- Serve and ENJOY!
