German Chocolate Cheesecake
German Chocolate Cheesecake
Today is my birthday!!!!!!! My all time favorite cake is German chocolate but this year, I didnt want cake. I decided to make a German chocolate cheesecake and I must say, this might be better than cake!!! The Oreo crust really set it off! This cheesecake was sooooooo easy to make!!! Honestly, I wasnt sure how it would turn out but it was amazing! Start by adding 12-14 Oreo cookies to a blender or food processor and blend until the Oreos are fine like dust. You can use the store bought crushed Oreos as well.
Add the Oreos to a bowl along with 3 tbsp of melted butter and stir.
Add the Oreos to a greased 9 inch springform pan and press the bottom evenly to form a crust.
In a bowl, add 2 blocks of softened cream cheese, 1/2 cup of sugar, 1/2 cup of cocoa powder and 1/4 tsp of salt and blend until smooth.
Add 4 eggs, one at a time and then blend.
Melt 4 oz block of German chocolate and add it to the batter along with 1/3 cup of heavy cream and mix well.
Pour the batter into the Oreo crust.
Add to a 350 degree oven and bake for 1 hour. Tap the pan a few times to remove any air bubbles. Optional: to prevent the cheesecake from cracking, add a little water at the bottom of baking pan and sit the springform pan on top. It doesnt matter if your cheesecake cracks since it will have a frosting on top. Your choice :) Once your cheesecake has fully cooked, allow it to cool completely.
To make the frosting, add 1 stick of butter to a pot. Once the butter has melted, add 1 cup of brown sugar and stir well. Once the brown sugar has dissolved in the butter, add 3 egg yolks and stir immediately. Be sure not to scramble the egg yolks.
Add 3/4 cup of evaporated milk and stir well.
Once the sauce has started to thicken, add 1 1/2 cup of chopped pecans and 1 1/2 cup of coconut flakes and stir well.
Remove the cheesecake from the oven once it is fully cooked. Allow the cheesecake to cool completely and spread the coconut and pecan frosting evenly on top.
Drizzle chocolate or caramel sauce on top and slice the cheesecake evenly. Serve and ENJOY!
