Pineapple Upside Down Bundt Cake

Behind German Chocolate Cake, there is Pineapple Upside Down Cake as a second runner-up as my favorite! Since I just ate German Chocolate Cheesecake for my birthday, Pineapple Upside Down Cake was up next! This recipe is easy and sooooo good! If you like a good moist pineapple cake, this is definitely the one for you! Pineapple Upside Down Cake was originated in Virginia in the 1920s. Dole Pineapple Company was hosting a contest and the winner made a Pineapple Upside Down Cake, which was very original at that time. I made this cake using a store-bought cake mix but you could also make this cake from scratch. Start by preheating your oven to 350 degrees. Start by melting 1/2 stick of butter and add 1/2 cup of brown sugar and whisk well.

Fully grease a bundt pan and pour the brown sugar in the pan.

Add pineapple slices and cherries in the middle of the pineapple slices in the bundt pan.

In a bowl, add one box of butter cake mix, 3 eggs, 1 stick of melted butter, 3/4 cup of pineapple juice and 1/2 tsp of vanilla extract and whisk well.

Pour the batter into the bundt pan and add to a 350 degree oven and cook for 33-35 minutes or until fully baked.

Remove from the oven and set aside for about 10 minutes. Once it has cooled for about 10 minutes, flip the bundt pan over onto your favorite cake pan and the cake will easily slide out of the pan.

Slice the cut and serve and ENJOY!

Ingredients

  • 1 box of butter cake mix
  • 3 eggs
  • 1/2 cup brown sugar
  • 1 stick of melted butter
  • 1/2 stick of melted butter
  • 3/4 cup pineapple juice
  • 1/2 tsp vanilla extract
  • 7 pineapple rings
  • 7 maraschino cherries

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a bowl, melt 1/2 stick of butter and add brown sugar and whisk well.
  3. Pour the brown sugar glaze into a fully greased bundt pan.
  4. In a bowl, add the butter cake mix, eggs, pineapple juice, 1 stick of melted butter and vanilla extract and mix well.
  5. Pour the batter into the bundt pan.
  6. Bake in the oven for 33-35 minutes or until fully baked.
  7. Remove from the oven and set aside for at least 10 minutes.
  8. Flip the bundt pan over onto your favorite cake pan. The cake should fall out easily.
  9. Slice the cake and serve and ENJOY!
