Pecan Praline Cheesecake Bars

Cheesecake is probably my second favorite dessert. German Chocolate cake is my all time favorite but cheesecake comes in at a close second. Anything with pecans are always good! Pecans are like bacon, it makes everything better. When you combine cheesecake, pecans and caramel, you have a for sure winner! Homemade caramel sauce is always better than the processed store bought ones. You might ask, what is a praline? A praline is a confection of nuts and sugar cooked until the sugar turns brown, basically a caramel sauce. It’s just a fancy name for it. Everything is homemade in this recipe, from the crust to the topping. To make the crust, grab 1 1/2 cups of crushed graham crackers. You can crush them yourself, using a food processor, or you can do like I did and buy the crushed ones. Add the crushed graham crackers and 1 tbsp of brown sugar to a bowl.

Pour 1/2 cup of melted butter in the bowl and stir well. The graham crackers will have a “wet look”.

Once it is mixed well, pour into a 9 inch baking pan lined with parchment paper. Form the crumbs into a square and spread evenly in the pan.

Once evenly spread, put into a 350 degree oven for 8-10 minutes. Do not burn!!! While the crust is baking, add 2 8 oz blocks of cream cheese into a bowl.

To the cream cheese, add 2 eggs (1 at a time), 1 cup of sugar, 1/3 cup of milk and 1/3 cup of flour and mix well using a hand mixer.

Pour the batter into the crust.

Put into a 350 degree oven for 1 hour or until the batter is no longer “jiggly”. Once cooked, cool for at least 2 hours. It’s better to make the cheesecake and let it chill overnight. While the cheesecake is cooking, its time to make the pecan praline sauce. In a sauce pan, melt 1 stick of butter and add 1 cup of brown sugar.

Once the brown sugar has completely dissolved, add 3/4 cup of heavy cream and stir.

Add 1/2 cup of chopped pecans and stir. Turn the heat off on the stove and let the sauce cool. The longer it cools, the thicker it will become.

Once the cheesecake has cooled, pour the sauce on top and spread evenly.

Cut into squares and serve. ENJOY!

Ingredients

Graham Cracker Crust
  • 1 1/2 cups of crushed graham crackers
  • 1 tbsp brown sugar
  • 1 stick of butter
Cheesecake Bars
  • 2 8 oz blocks of cream cheese
  • 2 eggs
  • 1 cup of sugar
  • 1/3 cup of milk
  • 1/3 cup of flour
Pecan Praline Sauce
  • 1 stick of butter
  • 1 cup of brown sugar
  • 3/4 cup heavy cream
  • 1/2 cup of chopped pecans

Instructions

Cheesecake and Crust
  1. Pour the graham crackers and 1 tbsp of brown sugar in a bowl. Add 1
  2. stick of melted butter to the bowl and mix.
  3. Add the graham crackers to a 9 inch baking dish lined with parchment paper.
  4. Cook in a 350 degree oven for 8-10 minutes.
  5. In a separate bowl, add 2 blocks of cream cheese, 2 eggs, 1 cup of sugar, 1/3 cup of milk and 1/3 cup of flour and mix well using a hand mixer. 
  6. Pour the batter into the crust and cook in a 350 degree oven for 1 hour or until the batter is no longer jiggly.
Pecan Praline Sauce
  1. In a sauce pan, melt 1 stick of butter. 
  2. Add 1 cup of brown sugar and stir.
  3. Once the brown sugar has dissolved, add 3/4 cup of heavy cream and stir.
  4. Once it starts to bubble, add 1/2 cup of chopped pecans and turn off the heat on the stove. 
  5. Stir and let the sauce cool. 
  6. Once the cheesecake has cooled, pour the sauce on top and cut into squares. 
  7. Serve and ENJOY!
