Southern Style Potato Salad
Whenever there is a family barbecue cookout, the potato salad is a MUST HAVE! Now, everyone cannot make potato salad and normally the aunt or grandma is in charge of this side dish. You would think it is an easy recipe to make but sometimes it can be too tangy or too mayo tasting. It is all about the right balance of sweet, salty, tanginess and creaminess. It is a skill to have to make potato salad. This recipe is how I like my potato salad. A little tangy, salty and sweet with a hint of herb flavor. Wash, cut and boil 10-11 small-medium sized russet potatoes. Make sure to salt the water anytime you are cooking a starch. In a separate pot, boil 2 eggs.
Once the eggs are done boiling, chop them along with 1 cup of diced white onion and 1 tbsp of fresh dill. Use fresh dill and not dried dill. It has a stronger flavor.
Once the potatoes are fork tender, add them to a large bowl and mash. You can keep a few potato chunks if you like your potato salad a little chunky.
To the potatoes, add the diced onion, diced boiled eggs, 3 tbsps mayonnaise (Hellman’s), 2 1/2 tbsps yellow mustard, 2 1/2 tbsps sweet relish, 1 tbsp fresh dill, 1 tsp salt, 1/4 tsp black pepper and 1/4 tsp of cayenne pepper.
Stir well and make sure everything is mix together.
Refrigerate for at least 1 hour. Serve and ENJOY!
