Shrimp Brochette

Who doesn’t love bacon wrapped shrimp? Whenever you add cheese and jalapeños to it, you have a masterpiece! This is one of my go to dishes anytime we are at a seafood restaurant. The saltiness from the bacon, the cheesiness and the spiciness always take these shrimp to a new level. I know sometimes people wonder if it makes the shrimp rubbery and overcooked, but wrapping it in bacon helps with that. The bacon is being cooked first and its allowing the shrimp to cook slower and also stay juicy. These will probably be your new favorite appetizer. The most time consuming part about this recipe is the prep. Having to make sure the cheese and the jalapeno fits between the shrimp and the bacon can get to be a tedious process. Just remember, if it doesn’t fit, you can always slice them thinner. Start by using jumbo size or colossal size shrimp. Clean and devein each shrimp. Make sure each shrimp has a slit in the middle (butterfly the shrimp).

You will use 1 lb (a whole pack) of bacon for this dish. Depending on how thin your shrimp are, you can slice the bacon strips in half and wrap each half around the shrimp. If your shrimp are not fully wrapped in bacon, you may need to use one whole slice for each shrimp. It depends on how thick you want the bacon on the shrimp. On the smaller shrimps, I used 1/2 slice of bacon and on the bigger ones, I used 1 whole slice of bacon.

Slice the jalapeno and pepper jack cheese into thin strips. Make sure they are thin enough to fit on the shrimp.

For each shrimp, add 1 slice of cheese and 1 slice of jalapeno.

Wrap the shrimp in the bacon slices. Repeat for each shrimp.

In a bowl, add 1/2 stick of butter, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika and 1 tsp blackening seasoning. Melt in the microwave.

Brush the butter mixture onto each shrimp.

Add to a 425 degree oven for 20 minutes and broil at 500 degrees for 5 minutes. Flipping half way through.

Remove from the oven and serve with a dipping sauce. ENJOY!

Ingredients

  • 1 lb of bacon (1 package)
  • 1 lb jumbo or colossal size shrimp
  • 1 fresh jalapeno
  • 2 oz block pepper jack cheese
  • 1/2 stick of butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp blackening seasoning

Instructions

  1. Clean, devein and butterfly the shrimp (slice them down the middle).
  2. Cut the bacon slices in half.
  3. Cut the jalapeno and block of cheese into thin slices.
  4. Add one slice of cheese and one slice of jalapeno to the middle area of the shrimp.
  5. Wrap each shrimp in bacon. Make sure they are fully wrapped.
  6. In a bowl, add the butter, garlic powder, onion powder, paprika and blackening seasoning. Melt the butter using a microwave.
  7. Brush the butter mixture onto each shrimp.
  8. Add to a 425 degree oven for 20 minutes. Cook on broil at 500 degrees for 5 minutes (flip halfway through so that the bacon on each side is crisp)
  9. Remove from the oven and serve with a dipping sauce. ENJOY!
