Chicken Biscuits & Gravy

You will get the best of both worlds with this dish. A chicken biscuit and biscuits and gravy! You will never eat biscuits & gravy the same after this! You are more than welcome to make your own biscuits but I like Pillsbury Homestyle biscuits. They are buttery, flaky and the perfect size! This recipe makes 4 chicken breasts but if you would like to make a full 8 servings, just cut up 4 chicken breasts instead of 2. The gravy measurements are the still the same. I always make extra gravy since my husband loves it. Also, you can substitute boneless chicken thighs instead of breasts if you like that better. Split 2 chicken breasts and cut them evenly.

Season the chicken breasts with 1 tsp of garlic powder, 1 tsp cajun seasoning, 1 tsp paprika and 1 tsp of onion powder.

Pour 1 cup of buttermilk in a bowl. Add the chicken breasts and 3-4 dashes of hot sauce. Let the chicken marinate for at least 30 minutes.

Cook the biscuits according to the package directions.

In a skillet, add 8 oz of breakfast sausage and cook completely.

Add 1 tbsp of flour to the cooked sausage and stir.

Pour 1 1/2 cup of half & half to the sausage and stir. Cook for about 5-7 minutes or until the gravy thickens. Add salt and pepper to taste.

Remove the biscuits from the oven once they are fully cooked.

Add vegetable oil to a cast iron skillet. Season 2 cups of flour with 1 tsp of cajun seasoning. Add the chicken breast to the flour and make sure each one is fully coated.

Once the oil is hot, add the chicken and cook 3-5 minutes per side or until the chicken is fully cooked. Remove and set aside to drain any excess oil

Cut the biscuits in half and add 1 chicken breast to each biscuit.

Top each biscuit with the sausage gravy. Serve with a side of scrambled eggs for a complete brunch meal. ENJOY!

Crispy chicken breast in between two flaky biscuits and topped with a savory sausage gravy.

Ingredients

  • 2 chicken breasts (4 if you want to make 8 biscuits)
  • 2 tsp cajun seasoning
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 8 oz breakfast sausage
  • 1 tbsp flour (for gravy)
  • 2 cups flour (for chicken breading)
  • 2-3 cups vegetable oil
  • 1 package of Pillsbury Homestyle biscuits (4 biscuits)
  • 3 dashes of hot sauce
  • 1 cup buttermilk
  • salt & pepper (to taste)
  • 1 1/2 cup half & half

Instructions

  1. Split the chicken breasts into two and season with garlic powder, onion powder, cajun seasoning and paprika.
  2. Add buttermilk to a bowl. Season with the hot sauce.
  3. Add the chicken breast to the buttermilk. Marinate for at least 30 minutes.
  4. Cook the biscuits according to the package directions.
  5. Add the breakfast sausage to a skillet and cook.
  6. Add 1 tbsp of flour to the sausage and stir.
  7. Add the half & half to the skillet and stir. Cook 5-7 minutes or until the gravy thickens. Season with salt & pepper to taste.
  8. Remove the biscuits from the oven once fully cooked.
  9. Heat the oil in a cast iron skillet.
  10. Add 1 tbsp cajun seasoning to 2 cups of flour.
  11. Add the chicken to the flour and coat evenly.
  12. Once the oil is hot, add the chicken breasts to the skillet. Cook 3-5 minutes per side or until the chicken is fully cooked.
  13. Remove and drain any excess oil.
  14. Cut the biscuits in half and add 1 chicken breast to each biscuit.
  15. Top with the gravy and serve. ENJOY!
