Nashville Hot is the new buffalo sauce now. My daughter is obsessed!!!! I decided to make it but I wanted to do something besides chicken, I decided to use catfish instead. Take 4 catfish filets and season with 1 tbsp of onion powder, 1 tbsp of garlic powder, 1 tbsp of lemon pepper seasoning, 1 tbsp of cajun seasoning and 1 tbsp of paprika. Make sure each piece is fully seasoned.
In a bowl, add 3 eggs, a splash of water and 5-6 dashes of hot sauce and beat well.
In a separate bowl, add 3 cups of corn meal and 1/2 cup of flour and season with 1 tbsp of cajun seasoning, 1 tbsp onion powder, 1 tbsp garlic powder, 1 tbsp lemon pepper seasoning and 1 tbsp paprika and stir well.
Coat each piece of catfish in the egg batter then into the corn meal mixture. Make sure they are fully coated. For a thicker coating, repeat the steps twice.
Add the catfish to a 350 degree oil and fry for 5-7 minutes or until the fish is completely cooked. Once fully cooked and golden brown, add them to baking rack to drain any excess oil.
In a bowl, add 1/2 cup of canola oil, 1-2 tbsp of cayenne pepper (depending on how hot you would like it to be), 1 tsp of brown sugar, 2 tbsp paprika and 1 tsp of salt. Feel free to add more salt if its not seasoned to your like. Whisk well.
Since fish is delicate, you don’t want to toss it in the sauce, it’s better to brush the sauce onto the pieces of catfish. Make sure the filets are fully coated in the sauce.
Serve with pickles, bread and your favorite side dish for a complete meal. ENJOY!
