Red Beans & Rice
A delicious and simple Louisiana creole dish that is a perfect Sunday meal. Red kidney beans are washed, soaked and simmered for 3 hours until they are thick and creamy. You can make this as a side dish or a main dish and serve it with rice and cornbread. This recipe is cooked on the stove for 3 hours but you can use an Instant Pot or a slow cooker. All 3 methods works perfect. You can also get creative with the meats and use smoked turkey or ham hocks, your choice. Feel free to use this recipe with white beans as well. Maybe use a ham on the bone instead of smoked pork neck bones. White beans compliment the saltiness of ham. Wash and soak 2 bags of kidney beans. Let them soak for at least 30 minutes to 1 hour, if possible. Some people soak their beans overnight, but you really don’t have too.
While your beans are soaking, cut 1 pack of andouille sausage, 1 bell pepper and 1/2 white onion.
In a large pot, add 1 tsp of vegetable oil. Once the oil is hot, add the sausage, onion and bell pepper.
Season the sausage and veggies with 1 tbsp of cajun seasoning, 1 tbsp of onion powder and 1 tbsp of garlic powder. Stir well.
Once the onions and bell peppers have softened, add 1 lb of smoked pork neck bones to the pot.
Add the soaked beans to the pot and 6-8 cups of water, depending on how creamy you like your beans.
Add 3 bay leaves to the pot.
Cover and cook for 3 hours on medium heat.
After the beans are cooked, remove the pork neck bones and scrape the meat off of each bone. Add the meat to the beans and stir.
Cook another 15-20 minutes.
Serve with rice and ENJOY!

Ingredients
- 2 1 lb bags of red kidney beans
- 1 lb Andouille smoked sausage
- 1 lb smoked pork neck bones
- 1 green bell pepper
- 1/2 white onion
- 3 bay leaves
- 6-8 cups of water
- 1 tbsp cajun seasoning
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp vegetable oil
- salt & pepper (to taste)
Instructions
- Wash and soak the red kidney beans.
- While the beans are soaking, slice the Andouille sausage and dice the onion and bell pepper.
- Add the vegetable oil to a large pot. Once the oil is hot, add the sausage, onion and bell pepper.
- Season with the cajun seasoning, garlic powder and onion powder.
- Once the onion and bell pepper have softened, add the smoked pork neck bones.
- Add the red kidney beans and the water to the pot.
- Add the bay leaves and stir.
- Cover and cook for 3 hours.
- Once the beans are cooked, remove the pork neck bones. Scrape the meat off of each bone and add the meat to the beans.
- Cook for 15 more minutes and add salt and pepper to taste.
- Serve with rice and ENJOY!
