Turkey Meatball Subs

Meatball subs are an easy way to feed a crowd of people. You could also make these into sliders instead of a full sub sandwich. These are very popular at sandwich shops so I decided to add my twist to it and use ground turkey instead of ground beef or pork. The added flavors from the marinara sauce and cheese enhanced the flavor of the ground turkey and made them very moist. I did an open-faced sub, which means I cut a hole in the top of the bread so that the meatballs would fit. You can use any bread you prefer for this recipe. Chop 1 cup of onions and 1/2 bell pepper.

In a skillet, add 1 tsp of butter and 1 tsp of minced garlic. Once the butter has melted, add the onion and bell pepper and cook until the veggies are soft.

In a bowl, 1 lb of ground turkey, the softened onions and bell pepper, 1 cup of bread crumbs, 1 cup of grated parmesan cheese, 1 tsp of dried parsley, 1 tsp of onion powder, 1 tsp garlic powder, 1 tsp of cajun seasoning and 1 beaten egg.

Mix well and form the mixture into golf ball size balls.

In a skillet, add 1 tsp of olive oil. Once the oil is hot, add the meatballs. Cook the meatballs 3-5 minutes on each side or until they have browned.

Add them to a 500 degree oven for 10-12 minutes or until they are fully cooked on the inside.

Cut holes in the sub bread and add 1 tsp of shredded mozzarella cheese.

Add the cooked meatballs to the sub bread. Top with marinara sauce and more mozzarella cheese.

Add to a 500 degree oven for 10 minutes or until the cheese has fully melted.

Remove from the oven and serve with a salad for a complete meal. ENJOY!

Ingredients

  • 1 lb ground turkey
  • 1 jar marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup diced white onion
  • 1/2 green bell pepper
  • 1 cup grated parmesan
  • 1 cup bread crumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cajun seasoning
  • 1 tsp minced garlic
  • 1 tsp butter
  • 1 tsp olive oil
  • 4 sub rolls
  • 1 tsp dried parsley

Instructions

  1. Chop the onion and bell pepper.
  2. Add the butter and minced garlic to a skillet. Once the butter has melted, add the onion and bell pepper. Cook until the veggies are soft.
  3. In a bowl, add the ground turkey, garlic powder, onion powder, cajun seasoning, dried parsley, egg, bread crumbs and grated parmesan. Mix well and form into golf ball size balls.
  4. In a skillet, add the olive oil. Once the olive oil is hot, add the meatballs. Cook 3-5 minutes on each side or until the meatballs have browned.

  7. Add 1 tsp of mozzarella cheese to each sub.
