A few weeks ago, my family and myself went to this Italian restaurant and we ordered a shrimp scampi. I originally thought it was a normal shrimp scampi with pasta, but no! It was served as an appetizer with bread. I immediately fell in love and knew that I had to make this dish at home and create my own recipe. After I made it, I did feel like my recipe was better than the restaurants and my family will agree :). Normally, whenever you think of shrimp scampi, it is served with some sort of pasta but having it as a dip is a lot more flavorful in my opinion. Plus, this is an easy and quick appetizer that you can make. Start by peeling and deveining 1 lb of colossal size or large shrimp. You can keep the tails on or off, I kept mine on so they won’t shrink in size too much. Season the shrimp with 1 tsp dried parsley, 1 tsp paprika and 1 tsp garlic salt. Make sure each shrimp is fully coated with seasoning.
Grab 3-4 cloves of garlic and chop them. Fresh garlic cloves are better for this recipe since it adds more flavor than jarred minced garlic.
Slice 1 cup of cherry tomatoes in half.
In an oven-safe dish, add the shrimp, tomatoes and garlic.
Cut 1 stick of butter into small slices and layer on top of the shrimp.
Pour 1/3 cup of dry vermouth and squeeze the juice of 1/2 lemon over the shrimp.
Put into a 500 degree oven for 8-10 minutes or until the shrimp have turned a pink color. Be careful not to over cook your shrimp.
In a bowl, melt 1 tsp of butter and 1/2 tsp garlic salt using a microwave. Slice the Italian or French Bread into 1-2 inch slices and brush the bread with the melted butter. Using a griddle pan, heat the bread 1-2 minutes on each side.
Remove the shrimp scampi from the oven. Be careful, it will be hot! Top the shrimp with 1 tbsp of grated parmesan cheese and 1 tbsp of bread crumbs.
Serve with the Italian bread and ENJOY!

Ingredients
- 1 lb colossal or large sized shrimp
- 1/3 cup dry vermouth
- 1 cup cherry tomatoes
- 3-4 fresh garlic cloves
- 1 tsp parsley
- 1 tsp paprika
- 1 tsp garlic salt
- Optional: 1/2 tsp red pepper flakes
- 1 tbsp grated parmesan cheese
- 1 tbsp bread crumbs
- 1 stick butter
- 1 tsp melted butter (for bread)
- 1/2 tsp garlic salt (for bread)
- juice of 1/2 lemon
- 1 loaf of Italian or French Bread
Instructions
- Peel and de-vein the shrimp. Season with garlic salt, paprika and parsley. Optional: add the red pepper flakes to the shrimp.
- Chop the garlic cloves.
- Cut the cherry tomatoes in half sizes.
- Place the shrimp, tomatoes and garlic in an oven safe dish.
- Slice the stick of butter into small pieces. Lay on top of the shrimp.
- Pour the dry vermouth and lemon juice over the shrimp.
- Add to a 500 degree oven for 8-10 minutes. Do not over cook.
- Slice the loaf of Italian bread into 1-2 inch thick slices.
- Mix the melted butter and 1/2 tsp of garlic salt together. Brush the butter onto one side of each slice of bread.
- Using a griddle pan, heat the bread 1-2 minutes per side.
- Remove the shrimp scampi from the oven, be careful it will be hot.
- Top the shrimp scampi with grated parmesan cheese and bread crumbs.
- Serve with the slices of Italian bread and ENJOY!
