Seafood Chopped Salad
My Husband and I love going to different places for lunch. Recently, we stumbled upon Oceanaire, which we have had many of times, but never during lunch time. On their menu is a delicious Seafood Chopped Salad. Once I tasted it, I knew I had to remake it at home and I did just that!!! This salad is light, refreshing and extremely flavorful! You can get creative with this salad by adding different veggies or even different seafood but I think the combination that I had in this salad is perfect. Its a must try!!! Start by peeling and deveining 1 lb of shrimp. Season with 1 tsp of garlic salt and 1 tsp of paprika. Make sure the shrimp is fully coated in the seasoning.
Melt 1 tbsp of butter in a skillet and add the shrimp. Cook 3-5 minutes or until the shrimp are fully cooked. Set aside and allow the shrimp to cool completely.
Chop one head of Romaine lettuce and fully wash and dry.
Wash and dice 1 cup of red onion, 1 cup of diced tomato and 1 diced cucumber.
In a bowl, add the chopped Romaine lettuce, diced red onion, cucumber, tomatoes, 2 tbsp of capers, the cooked shrimp, 4 oz of lump crabmeat and 1/2 cup feta cheese.
To make the vinaigrette, in a bowl add 1/4 cup of olive oil, 2 tbsp of red wine vinegar, 2 tbsp of lemon juice, 1 tsp of garlic salt and 1 tsp of dried oregano and whisk well.
Pour the dressing over the salad and toss well.
Garnish with a sliced hard boil egg. Serve with a soup and bread for a complete meal. Serve and ENJOY!

- 1 head of Romaine lettuce
- 1 cup diced red onion
- 1 cup diced tomato
- 1 diced cucumber
- 2 tbsp capers
- 1/2 cup feta cheese
- 4 oz lump crab meat
- 1 lb shrimp
- 1 tsp garlic salt
- 1 tsp paprika
- 1 tbsp butter
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 2 tbsp lemon juice
- 1 tsp garlic salt
- 1 tsp dried oregano
Instructions

- In a skillet, add 1 tbsp of butter. Once the butter has melted, add the shrimp and cook 3-5 minutes or until the shrimp are fully cooked.
- Chop the romaine lettuce, red onion, tomatoes and cucumbers and add it to a bowl.
- Add lump crab meat, cooked shrimp, capers and feta cheese to the salad.
- Pour the vinaigrette on top of the salad and toss well.
- Garnish with a sliced hard boiled egg. Serve and ENJOY!
