Sea bass Filets W/ Lemon Butter & Caper Sauce
Sea bass is a light and delicate fish. When you dont want something heavy for dinner, this is the meal for you. Since the fish is so light, it doesnt take long to cook and not much prepping either. I pan seared the seabass but you could also cook it in the oven. I prefer pan seared so that it doesnt get dry. The oven can quickly dry out the fish if it is not carefully watched. I took 5 filets and seasoned them with old bay, parsley, lemon pepper and paprika. In a pan, heat 2 tbsp of butter of 1 tsp of vegetable oil.
Once your pan is hot and the butter has melted, carefully place your filets in the pan. Cook 5-7 minutes each side.
Once all of your filets have been cooked, set them aside. In a sauce pan, add 2 tbsp of butter and 1 tsp minced garlic.
Once the butter has melted completely, add the juice of half of a lemon, 1/4 cup dry white wine (chardonnary preferably), 1 tbsp heavy cream, 1 tbsp of capers and salt & pepper (to taste).
Simmer for 5 min or until the sauce has thickened. Taste and pour on top of the fish. ENJOY!

Ingredients
- 5 Sea bass filets
- 2 tbsp butter
- 1 tsp vegetable oil
- On each filet (front and back):
- 1 tsp of Old Bay seasoning
- 1 tsp of lemon pepper seasoning
- 1 tsp paprika
- 1 tsp parsley flakes (or fresh parsley)
- 2 tbsp butter
- Juice of 1/2 lemon
- 1 tsp minced garlic
- 1 tbsp capers
- 1 tbsp heavy cream
- 1/4 cup dry white wine
- Salt & Pepper (to taste)
Instructions
- In a pan, heat butter and olive oil.
- While the pan is heating, season each side of the filets with old bay, lemon pepper and paprika.
- Add the fish to the pan.
- Cook 5 minutes per side.
- Remove fish and set aside.
- In a sauce pan, add 2 tbsp of butter and minced garlic.
- Once the butter has melted, add the lemon juice, heavy
- cream, white wine, capers and salt & pepper.
- Simmer for 5 minutes or until the sauce has thickened.
- Taste and pour over the sea bass filets. Add parsley on top.
