Buffalo Chicken Potato Skins

These potato skins are cheesy, spicy, saucy and packed with flavor! Did I mention they are extremely easy to make? My husband and I would order potato skins from different restaurants, but they all had the same ingredients, bacon, cheese and chives. So I decided to do something different and add chicken. I knew it couldnt be just plain chicken, it had to have some sauce and spice. Of course, buffalo chicken came to my mind. I pre-heated my oven to 375 degrees and grabbed 7 russet potatoes, washed and wrapped them in aluminum foil. Its the same process as making a baked potato, but a little different. Put them in the oven for 1 hour or until they are soft.

While your potatoes are in the oven, cook 2 chicken breasts in a pan with 1/2 cup of water on medium heat until the chicken is tender enough to shred. If you are not a fan of breast meat, you can use boneless skinless chicken thighs instead. Once the chicken is tender, shred evenly.

Remove the potatoes from the oven, they will be extremely hot so please be careful. Let them cool for about 30 minutes or until you are able to touch them. Remove the foil and split the potatoes in half.

Take a small sharp knife and carve an oval inside of the potato. This will make it easier to scoop the insides into a bowl. Take a small spoon and remove the inside of the potatoes.

Repeat the steps for the remainder of the potatoes. Once they are hallowed out, put them on a baking sheet. If your oven is turned off, turn it back on to 375 degrees.

Take your shredded chicken and pour 1 cup of your favorite buffalo sauce in a bowl. If you prefer to make your own buffalo sauce, then take 1 cup of louisiana hot and mix together with 1/3 cup of melted butter. There you have it, homemade buffalo sauce. I didnt make mine this time, I used Frank’s buffalo sauce.

Mix all togther. Grab the shredded mozzarella and add 1-2 tbsps of cheese to each potato skin. Once they are filled with cheese, top them with the shredded chicken and then top with more cheese.

Put them back in the oven for 20 minutes or until the cheese is fully melted. Serve with ranch or bleu cheese. ENJOY!

A twist on the normal potato skins. Cheesy, saucy and delicious!

Ingredients

  • 7 russet potatoes (makes 14 potato skins)
  • 2 chicken breasts
  • 1 cup of buffalo sauce
  • 3 cups shredded mozzarella cheese
  • 1/2 cup water

Instructions

  1. Pre-heat oven to 375 degrees
  2. Wash and wrap each potato in aluminum foil. Cook for 1 hour or until the potatoes are soft.
  3. In a pan, add 2 chicken breasts and 1/2 cup of water, cover and cook until chicken is tender. Optional: use boneless, skinless, chicken thighs instead of breasts. 
  4. Once the potatoes have been removed from the oven and cooled off, cut them in half. 
  5. Remove the inside of each potato.
  6. Add the shredded cheese.
  7. Once the chicken is cooked, shred evenly and add to a bowl. Add the buffalo sauce to the chicken and stir.
  8. Add the chicken to the potato skins. Top with more cheese and put back in the oven for 15-20 minutes or until the cheese is fully melted.
  9. ENJOY!
