Chicken Alfredo Roll-Ups

Pasta is my guilty pleasure. Not a particular pasta, ALL pasta. When I combined lasagna and chicken alfredo, I knew this was a match made in heaven. I made this an easy recipe since I did not make my homemade alfredo sauce, I used a jar alfredo sauce, which is just as good. Trust me! When you are coming home from work and you want something easy and delicious for dinner, this is the recipe. You will spend more time prepping than cooking. Start by pre-heating your oven to 375 degrees. In a pot, add 1/2 cup of water and 2 chicken breasts. If you are not a fan of chicken breast, you can use boneless skinless chicken thighs. Add garlic powder, onion powder, cajun seasonings to the chicken. Cover and Cook until the chicken is soft and shred evenly.

While your chicken is cooking, in a sauce pan add 3 cups of alfredo sauce and cook on low-med heat. If you are using a jar alfredo, you want to heat up the sauce and add garlic salt to give it more flavor. You can also use a homemade alfredo sauce. Cook the lasagna noodles according to the package instructions.

Cook 2 cups of broccoli florets (fresh or frozen) and chop. I used a bag of frozen broccoli florets and steamed them in the microwave. Quick and easy! Add salt & pepper to the broccoli. You want to make sure each ingredient is seasoned well.

Add 3 lasagna sheets to a baking sheet. Put the broccoli, shredded chicken, mozzarella cheese and alfredo sauce in separate bowls so that you can easily assemble the rolls.

On each lasagna sheet, spread one tbsp of alfredo sauce, mozzarella cheese, chicken and broccoli. Spread evenly and roll-up. Add some alfredo sauce to the bottom of the casserole dish. Add each roll to the casserole dish. Repeat the steps for all of the rolls.

Pour the remaining alfredo sauce (1 1/2 cup) on top of the rolls. If you like the rolls to be saucy, add more sauce. Top with 2 cups of shredded mozzarella cheese. Put in the oven for 20 minutes covered and 10-15 minutes uncovered or until the cheese is fully melted. Take out and serve with a caesar salad, ENJOY!

Ingredients

Chicken Roll-Ups
  • 2 chicken breasts 
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cajun seasoning
  • 1 tsp garlic salt
  • 1 cup water
  • 3 cups of alfredo sauce
  • 8-10 lasagna sheets
  • 4 cups mozzarella cheese

Instructions

  1. Pre-heat oven to 375 degrees.
  2. In a pan, add chicken breasts, garlic powder, onion powder, cajun seasoning and 1 cup of water. Option: you can also use boneless skinless chicken thighs. Cover and cook until chicken is tender enough to shred.
  3. Heat 2 jars of alfredo sauce in a sauce pan and add 1 tsp of garlic salt.
  4. Cook lasagna sheets according to package directions.
  5. Cook frozen or fresh broccoli florets.
  6. Add lasagna sheets to a baking sheet.
  7. To each lasagna sheet, spread evenly 1 tbsp of alfredo sauce, shredded chicken, broccoli and mozzarella cheese. Roll up and add to a casserole dish. Make sure to spread 1/3 cup of alfredo sauce to the bottom of the casserole dish. This helps the rolls stay in place.
  8. Repeat the steps for each roll-up.
  9. Spread the remainder of the alfredo sauce on top of the rolls in the casserole dish. Top with 2 cups of shredded mozzarella cheese.
  10. Put in the oven for 20 minutes covered and uncovered for 10-15 minutes or until the cheese in fully melted.
  11. Take out and serve.
  12. ENJOY!
