Mini Key Lime Pies
If you love sweet and tangy treats, these mini key lime pies are definitely for you! I am a huge fan of bite sized treats since so many whole cakes and pies get thrown away since no one ever finishes the entire pie or cake. Mini versions are always the best! Each person can get as many as they like without feeling too guilty. This recipe calls for “key limes” but if you are unable to find them in the store, regular limes (Persian limes) will work. I know you are asking, what is the difference in the different limes, so I will tell you. Key Limes are smaller and not as tart as the normal lime that you find in the grocery store. They are smaller and turn a yellowish-green color than the normal dark green color you are use to seeing with Persian limes. You will normally find them in a bag instead of buying them individually. Since the limes are small, you will have to squeeze probably the whole bag of limes to get to 3/4 cup of juice.
In a bowl, add 1 cup of crushed graham crackers, 1 tbsp of brown sugar and 1/2 cup of melted butter. Stir until the butter is mixed in with the graham crackers.
Add cupcake liners to a muffin pan. Spoon 1-2 tbsps of mixture into each cupcake liner. Add to a 350 degree oven for 8 minutes.
In a separate bowl, add 1 14 oz can of sweetened condensed milk, 3 egg yolks, 3/4 cup of lime juice, 1 tsp of lime zest and 1 tbsp of sour cream. Whisk well. If you like your key lime pie a little tangier, add 1 cup of lime juice instead of 3/4 cup. Try not to get any egg whites in the mixture. You want to keep the filling creamy, so only use the egg yolks.
Spoon 2-3 tbsps of mixture into the graham cracker crusts.
Add to 350 degree oven and cook for 15-20 minutes.
Remove from oven and let chill for 1 hour.
Top with whipped cream and ENJOY!

- Spoon 1-2 tbsps of mixture into cupcake liners.
- Bake in a 350 degree oven for 8 minutes.
- Remove and cool.
- In a bowl, add the sweetened condense milk, 3 egg yolks, sour cream, lime juice and lime zest.
- Whisk well until smooth and creamy.
- Spoon 2-3 tbsps of mixture into each crust.
- Bake for 15-20 minutes in a 350 degree oven.
- Remove and cool for at least 1 hour.
- Serve with whipped cream.
