Buffalo Chicken sliders

Anything with “buffalo” sauce is a sure pleaser in my book. It is spicy, tangy and richness all in one sauce. Whenever you add fried chicken to it, it takes it to a new level! Buffalo sauce got its name from a restaurant located in Buffalo, New York. Nope, it has nothing to do with the animal buffalo or bison, just the location of the restaurant that was considered the first to have created buffalo sauce. This recipe can be for sliders or a whole chicken sandwich. Just don’t cut up the chicken breasts too small. Also, you could use boneless skinless chicken thighs if you are not a fan of chicken breasts. Take 2 whole chicken breasts and slice them in half then in fourths. Depending on the size of your buns, cut them in eighths.

Season with 2 tbsps of garlic powder, 2 tbsps of onion powder and 2 tbsps of cajun seasoning.

Anytime you fry chicken, you should always marinate it buttermilk first. The buttermilk breaks down the enzymes in chicken and allows it to stay moist. Add the chicken breasts to 1 cup of buttermilk. Make sure to add 3 dashes of hot sauce to the buttermilk. Marinate for at least 1 hour.

While the chicken is marinating, add 2-3 cups of vegetable oil in a cast iron skillet. In a bowl, add 2 cups of flour and season the flour with 1 tbsp of garlic powder, 1 tbsp of onion powder and 1 tbsp of cajun seasoning.

Coat each piece of chicken in the flour.

Once the grease has reached a temperature of 350-375 degrees, add the chicken breasts. Do no over crowd the pan or your chicken will boil and not fry. Add 4-5 pieces, depending on the size of the pan. Cook 6-8 minutes or until the chicken is fully cooked.

Once the chicken breasts are fully cooked on the inside, place on a rack to drain any excess oil. In a bowl, add 1 tbsp of butter and 1/4 cup of Louisiana hot sauce and heat. Stir well until the sauce has turned a more light orange color. If you prefer not to make your own buffalo sauce, you can use a jar of pre-made buffalo sauce.

Toss each fried chicken breast into the sauce. Make sure each piece is fully coated.

Once all of the chicken breasts are coated, add to slider buns and top with lettuce and pickles. ENJOY!

Spicy, saucy and juicy chicken breast that is breaded, fried and tossed in an homemade buffalo sauce.

Ingredients

Fried Chicken Breasts
  • 2 whole chicken breasts
  • 3 tbsp garlic powder
  • 3 tbsp onion powder
  • 3 tbsp cajun seasoning
  • 1 cup buttermilk
  • 3 dashes hot sauce
  • 2 cups flour
  • 2 cups vegetable oil
Buffalo Sauce
  • 1 tbsp butter
  • 1/4 cup hot sauce

Instructions

Fried Chicken Breasts
  1. Slice the chicken breasts into eighths.
  2. Season with 2 tbsp garlic powder, 2 tbsp onion powder and 2 tbsp of cajun seasonings.
  3. In a bowl, add 1 cup of butter milk and 3 dashes of hot sauce.
  4. Marinate the chicken breasts in the buttermilk for at least 1 hour.
  5. Add the vegetable oil to a cast iron pan.
  6. While the oil is heating, add 2 cups of flour, 1 tbsp of onion powder, 1 tbsp garlic powder and 1 tbsp cajun seasoning to a bowl. 
  7. Add the chicken to the flour mixture.
  8. Make sure each piece is fully coated. 
  9. Once the oil has reached a temperature of 350-375 degrees, add the chicken breasts.
  10. Cook 6-8 minutes or until the chicken is fully cooked. 
  11. Once cooked, seat aside and drain the excess oil.
  12. Toss the chicken breasts in the buffalo sauce.
  13. Serve with slider buns, pickles and lettuce.
  14. ENJOY!
Buffalo Sauce
  1. To a microwave safe bowl, add 1 tbsp of butter and 1/4 cup of hot sauce.
  2. Heat and stir. Make sure the butter is fully mixed in with the hot sauce.
