Crab Fried Rice

I know most of us has had shrimp fried rice or even chicken fried rice, but what about crab fried rice? It is a simple and easy dish that you can get creative with. Normally, it does not include carrots but I love carrots in any type of fried rice, it adds a freshness to the dish. I know the cost of lump crab meat is really pricey, but it is definitely worth it in this dish. You could try and use imitation crab meat, but I do not recommend it since that would be the star of the dish. Now, if you like the taste of imitation crab, then go for it!! Like I said, you can get creative with this dish. It also works better when the rice is at least one day old. Dice up 1/2 of an onion and 1/3 cup of fresh carrots.

Add 2 tbsp of vegetable oil to a hot wok or a pan.

Once the oil is hot, add the diced onion, carrots and 2 tbsp of minced garlic.

Cook the veggies for 1-2 minutes and then add 3 beaten eggs.

Cook the egg until it is fully scrambled. Add 4 cups of day old cooked Basmati or Jasmine rice to the mixture and 1 tbsp of butter and mix well.

Once all of the ingredients are mixed in, add 1/3 cup of soy sauce, 2 tbsp of chili paste and 2 tbsp of hoisin and stir well. Make sure all of the ingredients are mixed in.

For more added freshness, add 2 tbsp of chopped green onion.

Stir well and add 1 8 oz can of lump crab meat.

Stir the crab meat into the rice. Taste and make sure it is seasoned to your liking, if not, add more soy sauce. Serve with your favorite side dish and ENJOY!

Basmati rice, veggies and lump crab meat cooked in a sweet and spicy sauce.

Ingredients

  • 4 cups cooked Basmati or Jasmine Rice
  • 1/2 diced white onion
  • 1/3 cup diced carrots
  • 2 tbsp minced garlic
  • 2 tbsp vegetable oil
  • 3 beaten eggs
  • 1/3 cup soy sauce
  • 3 tbsp Hoisin sauce
  • 2 tbsp chili paste
  • 1 8oz can of lump crab meat
  • 1 tbsp butter
  • 2 tbsp chopped green onion

Instructions

  1. Dice the onion and carrots.
  2. Add the vegetable oil to a hot wok or pan.
  3. Add the onion and carrots to the hot oil along with the minced garlic. Cook 1-2 minutes.
  4. Add the beaten eggs to the pan.
  5. Cook until the eggs are scrambled.
  6. Add the cooked rice to the mixture.
  7. Add the butter to the rice and mix well.
  8. Pour the soy sauce, chili paste and Hoisin sauce onto the rice and mix well. Make sure all of the ingredients are mixed in.
  9. Add the chopped green onion and stir well.
  10. Add the lump crab meat to the rice mixture and stir well. Once everything is mixed in, taste and make sure it is seasoned to your liking. If not, add more soy sauce.
  11. Serve and ENJOY!
