Caprese Bruschetta

Every time I make these, I always get the question, “what is bruschetta"?” Well, bruschetta is in Italian means toasted bread with toppings added to it. Simple enough…….most bruschetta include only diced tomatoes and other seasoning. I decided to combine bruschetta with one of my favorite fresh salads, a caprese salad. Caprese is a salad with mozzarella, tomatoes and basil….yum!!!! This is an easy and extremely flavorful appetizer! I topped the bruschettas with my homemade balsamic glaze. Grab 1 baguette loaf. I used the pre-cut one, its easier than having to cut them yourself. If you cant find the pre-cut baguette, just make sure you slice them 1/4 inch thick.

Arrange the slices of baguette on a baking sheet. Spread butter on each slice.

Here is where the Caprese part is added to the bruschetta. Top each slice of baguette with 1/2 slice of mozzarella cheese. Put them in at 425 degree oven for 5-7 minutes or until the cheese has melted.

In a bowl, add 2 cups of diced tomatoes, 1/4 tsp salt, 1/4 tsp black pepper and 1/4 cup of diced fresh Basil leaves. Mix well.

Spoon 1 tsp of mixture on top of each baguette slice.

Drizzle each slice with my homemade Balsamic Glaze.

All of the flavors of a Caprese salad on top of toasted baguette slices.

Ingredients

  • 8-10 slices of baguette bread
  • 2 cups of diced tomatoes
  • 4-5 slices of mozzarella cheese
  • 3 tbsps of butter
  • 1/3 cup of diced fresh basil leaves
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2-3 tbsps balsamic glaze

Instructions

  1. Grab 8-10 slices of baguette bread and spread butter evenly on each slice.
  2. Add 1/2 slice of mozzarella cheese to each slice of bread. Make sure the bread is fully covered with the cheese.
  3. Put the bread in a 425 degree oven for 5-7 minutes or until the cheese is melted.
  4. In a bowl, add the tomatoes, salt, pepper and basil. Stir well.
  5. Spoon 1 tsp of mixture to each baguette slice.
  6. Drizzle each slice with balsamic glaze.
  7. Serve and ENJOY!
