Smoked Turkey Pot Pie

As a kid, if my mom did not feel like cooking, she would always tell me “put a pot pie in the oven and eat that.” I grew up eating the frozen pot pies and always thought they were delicious, until I became an adult. I started eating fresh pot pies at local restaurants and thats when I learned that the frozen ones are no where near as good. I have tried chicken and beef pot pie but I wanted to do something different for this recipe. In the middle of the night, I woke my husband up and just said “smoked turkey.” He looked at me like I was crazy LOL but then I explained why I said smoked turkey and he agreed that it would be a great twist to the normal pot pie that we are used too. I figured the smokiness of the turkey would give it some added flavor. I wanted to make sure to stick with my “easy” recipes and so I decided to get some store bought smoked turkey and use that. I used smoked turkey wing drumstick and cut the meat off of the bone. Dice the turkey into small cubes. Pre-heat your oven to 425 degrees.

In a pan, melt 4 tbsps of butter and add 1 tsp of minced garlic, 1/2 diced onion and 1 cup of frozen peas & carrots. Cook until the veggies are soft.

Once the veggies are soft, add 1/2 cup of flour and stir. Add 2 cups of chicken stock and mix well.

Add 1 cup of heavy cream and stir. Season with 1 tsp of salt and 1/2 tsp of pepper. Taste and make sure it is seasoned to your liking. If you would like some spice, feel free to add some cajun seasoning or cayenne pepper.

Add the diced smoked turkey meat and stir well.

For this recipe, I used a store bought pie crust but feel free to make your own if you would like. I am not a baker so I like the store bought pie crusts. Add one of the pie crusts to the bottom of the pie dish and using a fork, pierce a few holes in the bottom. This allows the heat to distribute evenly to the bottom crust and cook through.

Add the filling to the pie crust. Lay the other pie crust on top and pinch the edges.

In a bowl, beat 1 egg and a splash of water. Using a brush, spread on the top of the pie. Cut 4 small slices in the pie to allow for ventilation.

Add to the oven and cook for 40-45 minutes or until the crust is golden brown.

Remove from the oven and serve. Be careful, the filling is extremely hot. Let the pie cool for a few minutes before eating. ENJOY

Classic pot pie with a twist. Flaky, buttery crust with a creamy sauce, vegetables and smoked turkey.

Ingredients

Smoked Turkey Pot Pie
  • 2 cups smoked turkey meat
  • 1 cup frozen carrots and peas
  • 1/2 diced white onion
  • 2 cups chicken broth
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • optional: 1 tsp of cajun seasoning or 1/2 tsp cayenne pepper
  • 1 tsp minced garlic
  • 1 14 oz box of pie crust
  • 1 cup heavy cream
  • 4 tbsp butter
  • 1 egg

Instructions

Smoked Turkey Pot Pie
  1. Preheat oven to 425 degrees
  2. If you purchased a store bought smoked turkey wing drumstick, cut the meat off of the bone and dice into small cubes.
  3. Dice the onion.
  4. In a pan, melt the butter and add the minced garlic.
  5. Add the diced onion and frozen peas & carrots.
  6. Cook until the veggies have softened.
  7. Add the flour to the veggies and stir.
  8. Add the chicken broth and stir. 
  9. Add the heavy cream and stir. Season with salt & pepper to your liking. Optional: add cajun seasoning or cayenne pepper for spice.
  10. Add the diced smoked turkey meat and stir well.
  11. Add the first pie crust to the pie dish. Using a fork, pierce holes on the bottom of the pie crust.
  12. Pour the filling into the crust. You may have extra filling, if so, freeze it and use it another time.
  13. Add the second pie crust on top and pinch the sides.
  14. In a bowl, beat one egg and a splash of water.
  15. Using a brush, spread the egg wash over the top of the pie.
  16. Slice 4 small slits into the top of the pie for ventilation.
  17. Cook in the oven for 40-45 minutes or until the crust is golden brown.
  18. Remove from the oven. Be careful, the filling is extremely hot. Allow the pie to cool for a few minutes before serving.
