Chicken & sausage Jambalaya

Jambalaya is a Creole and cajun rice dish with African, French and Spanish influence. It was originated from Louisiana. Jambalaya comes from the Provencal word jambalaia, meaning a mish mash or mixup and rice pilaf. You can use any protein you would like in this dish. You can use seafood, steak or keep it simple like this recipe and use chicken, but you have to add sausage. That is a major part that adds a good cajun flare to it. This is another one pot dish, which by now, you know that I love. Your family will love this one also. Start by cutting up two chicken breasts into bite size pieces.

Season the chicken breast with 1 tbsp of garlic powder, 1 tbsp onion powder and 1 tbsp of cajun seasoning.

Add 1 tsp of vegetable oil to a pot. Once the oil is hot, add the chicken breast.

While the chicken is cooking, cut up 1/2 pound of smoked sausage (you could also use Andouille sausage), 1 green bell pepper, 1 red bell pepper and 1/2 white onion.

Add the veggies and sausage to the pot and stir.

Cover and cook for 10 minutes or until the veggies are soft.

To the pot, add 2 cups of long grain rice (preferably Basmati rice, it gives a nuttier flavor) stir and add 4 cups of chicken broth.

Add 1 tbsp of tomato paste and mix in well.

Cover and cook for 20-25 minutes or until the rice is tender.

Taste and add more cajun seasoning, if needed. Serve with cornbread for a complete meal and ENJOY!

Ingredients

  • 2 chicken breasts
  • 1/2 lb smoked sausage or Andouille sausage
  • 1 tbsp of garlic powder
  • 1 tbsp of onion powder
  • 1 tbsp of cajun seasoning
  • 1 tbsp tomato paste
  • 4 cups chicken broth
  • 2 cups of long grain rice or Basmati rice
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 onion
  • 1 tsp onion

Instructions

  1. Cut up the chicken breast.
  2. Season with garlic powder, onion powder and cajun seasoning.
  3. Add oil to a pot. Once the oil is hot, add the chicken breast.
  4. While the chicken breast is cooking, cut the sausage, bell peppers and onion.
  5. Once the chicken has browned, add the sausage and veggies to the pot.
  6. Cook until the veggies are soft.
  7. Add the rice and stir. 
  8. Add the chicken broth and stir in the tomato paste.
  9. Cover and cook on medium heat for 20-25 minutes or until the rice is soft. 
  10. Taste and add extra cajun seasoning if needed.
  11. Serve and ENJOY!
