Fish Snack Wrap
Crispy Fish Snack Wrap
I havent always been a fan of seafood and tortillas until recently. Now, I love them! Especially fried fish and tortillas. I have been seeing the infamous Chicken Snack Wrap floating around on social media so I decided to make one, but using fish instead of chicken. It was a hit! The homemade tartar sauce brought it all together. I used catfish filets for this recipe but you could use tilapia or cod as well. I cut the filets into thinner pieces so that they would fit into the tortilla.
For the wet batter, in a bowl, add 3 eggs, 1 tbsp of yellow mustard, 5-7 dashes of hot sauce, 1 tsp of cajun seasoning, 1 tsp of garlic powder, 1 tsp of onion powder and 1 tsp of paprika. Mix well.
In a separate bowl, add 2 cups of fish fry of your choice. I used Bamma’s Seasoned Fish Fry, which was delicious!
For each fish filet, fully coat in the egg batter and then in the fish fry seasoning. Repeat until all of the filets are coated.
Add 2-3 cups of vegetable oil to a cast iron skillet. Once the hot reaches a temperature of 350 degrees, fry 3-4 filets at a time for 6-8 minutes or until they are fully cooked. Repeat until all of the filets are cooked.
To make the tartar sauce, in a bowl, add 2 tbsp of mayonnaise, 1 tsp of dill relish, 1 tsp of sweet relish, 1 tsp of lemon juice, 1 tbsp of fresh dill and salt & pepper to taste and whisk well.
To assemble the wraps, spread some tartar sauce on the bottom and top with lettuce, 1 piece of fish and shredded cheddar cheese. Fold the tortillas and seal with a toothpick.
Serve with your favorite side dish. Serve and ENJOY!
