German Chocolate Cupcakes

Since my birthday is today (August 8th) and my all time favorite dessert is German Chocolate Cake, it’s only right that I post my favorite dessert, but in a cupcake version. German chocolate is a milder chocolate taste than your normal chocolate cake. It is also lighter in color than chocolate cake. I find that the milder taste pairs perfectly with the sweet coconut and pecan frosting. You don’t want to have too many sweet layers. If you have been following my blog, you know that I am all about simple ingredients, so of course, the cake is made out of the box :) I add my extra touch to it to make it taste homemade. Pre-heat your oven to 350 degrees and grab your favorite box version of german chocolate cake and pour it in a bowl.

To make the cake taste more homemade, add 1/2 cup of whole milk, 1 stick of melted butter and 4 eggs. Mix well.

Line a muffin pan with cupcake liners. This recipes makes 18-20 cupcakes.

Fill each cupcake liner with 2-3 tbsps of filling. That should be about little more than half in each liner. Be careful not to over fill the liners or your cupcakes will look like muffins.

Put the cupcakes in a 350 degree oven for 18-20 minutes.

While the cupcakes are in the oven, add 1 stick of butter to a pot. To the butter add 1 cup of light brown sugar, 3 egg yolks and 3/4 cup of evaporated milk, stir well.

Once the butter has completely melted, add 1 1/2 cup of chopped pecans and 1 1/2 cup of sweetened coconut flakes and stir well. Cook for 3 minutes or until the sauce thickens. It will thicken more once it completely cools.

Whenever the cupcakes are cooked, remove them from the oven and allow them to cool.

Once the frosting has completely cooled, spoon and spread on the top of the cupcakes.

Top with extra pecans or chocolate sauce and ENJOY!

Ingredients

German Chocolate Cupcakes
  • 1 box german chocolate cake mix
  • 1/2 cup whole milk
  • 1 stick of melted butter
  • 3 eggs
Coconut Pecan Frosting
  • 1 stick of butter
  • 1 cup light brown sugar
  • 3 egg yolks
  • 3/4 cup evaporated milk
  • 1 1/2 chopped pecans
  • 1 1/2 cup sweetened coconut flakes

Instructions

German Chocolate Cupcakes
  1. Preheat oven to 350 degrees.
  2. Add 1 package of german chocolate cake mix to a bowl.
  3. Add milk, melted butter and eggs to the mix and whisk well.
  4. Line a muffin pan with cupcake liners.
  5. Fill the liners with 2-3 tbsp of batter or until they are little more than half way filled.
  6. Add to the oven and cook for 18-20 minutes.
  7. Once they are cooked, allow them to cool.
  8. Once they are completely cooled, top with the coconut pecan frosting.
  9. Serve and ENJOY!
Coconut Pecan Frosting
  1. In a pot, add 1 stick of butter, light brown sugar, evaporated milk and egg yolks and stir.
  2. Once the butter has fully melted, add the chopped pecans and shredded coconut.
  3. Cook for 3 minutes or until the sauce thickens. It will get thicker once it has cooled.
  4. Once the frosting is completely cooled, spoon and spread on the top of each cupcake.
