Lemon Pepper Fried Catfish

Lemon Pepper Fried Catfish

If you love fried catfish, I promise you will love this catfish recipe. I know we normally do not toss fried catfish in a sauce, but I decided to try something different. With this recipe, I made sure to fry the fish hard and then toss it in the sauce so that you will still get a crunchiness from the batter. You will get all of the flavors of salty, sweet, tangy and spicy……yum yum! If you are not a fan of catfish, this recipe works with fried salmon bites and tilapia. Just make sure to fry the batter harder than you normally would. Be careful not to burn it. Cut up 2 lbs of catfish filets into smaller pieces. Normally, 4 smaller pieces from 1 whole filet.

For the wet batter, you can use egg wash (egg and water) but I used buttermilk. Soak the catfish in 2 cups of buttermilk with 4 dashes of hot sauce for at least 30 minutes.

Season the catfish with 1/2 tbsp of cajun seasoning and add it to the buttermilk to soak.

For the dry batter, add 2-3 cups of cornmeal in a bowl and add 1/2 cup of all purpose flour. The added flour will allow the batter to stick to the fish. Season the cornmeal with 1 tbsp of cajun seasoning, 1 tbsp onion powder, 1 tbsp garlic powder and 1 tbsp of paprika.

Fully coat each each piece of fish in the batter.

In a cast iron skillet, add 2-3 cups of vegetable oil and heat. Once the oil has reached a temperature of 350 degrees, add the catfish. Cook each piece for 3-5 minutes or until fully cooked. Set aside on a baking rack to drain any excess oil.

For the delicious lemon pepper sauce, I used the sauce from Sienna Sauce. These sauces are amazing on fish, poultry or vegetables.

Pour the sauce over the fish and toss.

Serve with french fries and a salad for a complete meal. ENJOY!
