Broccoli, Rice & Cheese Casserole

I love a good casserole dish and this one is a crowd pleaser. Cheesy goodness added to broccoli, rice and topped with crushed crackers. How could you go wrong with this one? It’s simple and easy to make. This is one of my daughter’s favorite dishes for me to make. She says this is the only way she will eat broccoli but I always sneak veggies in her favorite dishes. This recipe calls for cream of chicken and processed cheese since this is the easy version. If you would prefer to make your own cheese sauce, use my cheese sauce in my Macaroni n’ Cheese recipe. This will work just as good! Before you start prepping, pre-heat your oven. Cook your broccoli and your rice. I used frozen broccoli florets but you can use fresh broccoli as well. Make sure the broccoli is tender, do not over cook or it will be mushy. Cook the rice according to the package directions. While your rice and broccoli are cooking, in a sauce pan, add 2 tbsps of butter.

Once the butter has melted, add 1 16 oz package of Velvetta cheese and 1 16 oz can of cream of chicken and mix well. Cook on low heat so that the cheese sauce does not burn.

Once your cheese sauce has melted add the cooked broccoli and cooked rice to the pan and mix together.

When it is thoroughly mixed, add 1 1/2 cup of milk and stir well.

Add 1 cup of shredded cheese, 1 tsp of onion powder, 1 tsp of garlic salt, 1 tsp of cajun seasoning and black pepper (to taste) and stir well.

Once everything is mixed together and it is seasoned to your liking, add to your favorite casserole dish and spread evenly. Once it is spread evenly, top with more shredded cheese and crush your favorite crackers to add on top. I used buttery Club crackers since they add more flavor. Its ok if you have a few chunks of crackers. Once it is topped with the shredded cheese and crushed crackers, melt 2 tbsp of butter and pour evenly on top. Add to a 350 degree oven and bake for 20-25 minutes.

Cook on broil for 2-3 minutes to get a golden brown crust. Remove from the oven and serve with your favorite main dish. Serve and ENJOY!

Broccoli, Rice & Cheese Casserole

Ingredients

Broccoli, Rice & Cheese
  • 2 - 3 cups of broccoli florets (fresh or frozen)
  • 1 can of Cream of Chicken
  • 1 16oz block of Velvetta cheese
  • 3 cups of rice
  • 1 1/2 cup of whole milk
  • 10-12 crackers (Club, Ritz or Saltines)
  • black pepper (to taste)
  • 4 tbsp butter
  • 2 cups of shredded cheddar cheese
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 1 tsp cajun seasoning

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Cook the rice and broccoli according to the package directions.
  3. In a sauce pan, add 2 tbsp of butter. Once the butter has melted, add the Velvetta cheese and cream of chicken and stir. Cook on low heat until the cheese is fully melted and creamy.
  4. Add the cooked broccoli and rice to the cheese sauce and stir.
  5. Add whole milk to thin out the mixture and stir well.
  6. Add 1 cup of shredded cheese, garlic salt, onion powder, black pepper and cajun seasoning and stir well. Taste to make sure it is seasoned to your liking.
  7. Pour into an oven-safe casserole dish.
  8. Sprinkle more shredded cheddar cheese on top. Crush the crackers and add on top of the cheese. Melt 2 tbsp of butter and pour evenly over the top of the casserole.
  9. Put the casserole into the oven uncovered for 20-25 minutes.
  10. Cook on broil for 2-3 minutes or until golden brown.
  11. Remove from the oven and serve. Be careful, it will be hot! Serve and ENJOY!
