Shepherd’s Pie

Whenever you think of the ultimate comfort food that sticks to your bones after eating it, Shepherd’s Pie has to be on the list. This is literally a meat and potatoes dish. The dish originated in England and is normally made with ground lamb and Guinness beer for extra flavor, but for this recipe I used ground beef and Worcestershire sauce. You can get creative with this dish and make it your own. If you are not a fan of ground beef, you could also use ground turkey. Whenever my Mom would make it, she would add cheese so I had to do the same thing. I am all about simple and easy ingredients but I will never use boxed mashed potatoes. Thats where I draw the line LOL. You are welcome to use boxed potatoes for this dish, but I wouldn’t suggest it :) Wash, peel and cut 2lbs of russet potatoes.

Boil the potatoes until they are fork tender.

Fully cook 1lb of ground beef in a skillet.

Drain any excess oil. Season the ground beef with 1 tbsp of garlic powder, 1 tbsp of onion powder and 1 tbsp of cajun seasoning.

Add 2 tbsp of tomato paste and 1/4 cup of Worcestershire sauce and stir well.

Add 2 cups of frozen peas and carrots and 1 cup of beef broth and stir well.

Cook on medium heat for 10-12 minutes or until the meat sauce thickens. While the sauce is cooking, mash the cooked potatoes.

To the potatoes, add 2 tbsp of butter, 1/2 cup of milk, 1 tbsp of sour cream and salt & pepper to taste. Stir until the potatoes are creamy.

Once the meat sauce has thickened, add the sauce to a 9x12 baking dish.

Top with 2 cups of shredded cheddar cheese.

Evenly spread the mashed potatoes on top of the cheese.

Add to a 400 degree oven for 20 minutes.

Remove from the oven. Melt 1 tbsp of butter and brush the butter on top of the casserole. Put back in the oven on broil for 5 minutes or until it is golden brown on top.

Remove from the oven and serve and ENJOY!

The ultimate comfort food casserole made with creamy mashed potatoes on top of a rich and delicious meaty stew.

Ingredients

  • 1 lb ground beef
  • 2 cups frozen peas & carrots mix
  • 2 tbsp tomato paste
  • 1/4 cup Worcestershire Sauce
  • 1 cup beef broth
  • 3 tbsp butter
  • 2 lbs russet potatoes
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp cajun seasoning
  • 1/2 cup milk
  • 1 tbsp sour cream
  • 1 tsp minced garlic
  • 2 cups shredded cheddar cheese
  • 1 tbsp melted butter
  • salt & pepper (to taste)

Instructions

  1. Wash, peel and cut the russet potatoes.

  5. Add the minced garlic, tomato paste and Worcestershire sauce and stir well.
  6. Add the frozen peas and carrots and beef broth and stir well. Cook 10-12 minutes or until the sauce thickens.
  7. While the sauce is cooking, mash the cooked potatoes.
  8. To the potatoes, add 3 tbsp of butter, sour cream, milk and salt and pepper. Stir well until the potatoes are creamy.
  9. Once the sauce has thickened, add to a 9x12 baking dish and top with cheddar cheese.
