King Crab Tacos
King Crab Tacos
My Husband loves fish tacos but I am not a huge fan of them. Maybe because most fish tacos are made with Cod and it has a strong fishy taste. Fishy taste with tortillas do not work well with my taste pallet. My Husband came up with the idea to make crab tacos…….I love crab so I knew he was on to something. Then he said “make king crab tacos” and I definitely knew he was on to something! Now, I know the cost of crab is ridiculous right now but I decided to splurge on this meal and it was worth every penny!!!!! This has officially turned me into a seafood taco lover. For this recipe, you only need 1 large king crab that weighs about 1/2 lb and you should make about 8 street tacos (the smaller tortillas). Cut the crab leg with kitchen shears and remove all of the meat.
Add 2 beaten eggs to a bowl. In a separate bowl, add 2 cups of flour and season with 1 tbsp of cajun seasoning, 1 tbsp of onion powder, 1 tbsp of garlic powder and 1 tbsp of paprika.
Add the crab meat to the eggs and then coat in the flour. Make sure it is fully coated. Repeat until you have the desired amount of coating on each piece of crab meat.
Heat 2-3 cups of vegetable oil in a cast iron until it reaches a temperature of 350 degrees. Add the crab meat and cook for 3-5 minutes or until the crab is golden brown. Set aside and remove any excess oil.
To add some freshness to the tacos, I made a light and refreshing pico de gallo. Add 1 large diced tomato (or 2 medium sized tomatoes), 1/3 cup of red onion, 1/3 cup of white onion, 1/2 fresh jalapeno (take out the seeds if you do not like spice), 1/4 cup of fresh chopped cilantro, juice of 1/2 lime, 1 tsp of minced garlic and salt & pepper to taste. Stir well.
Assemble the tacos by adding the fried crab and top with the pico de gallo, queso fresco cheese and crema. Serve and ENJOY!
