Chicken & Red Velvet Waffles

Fried chicken and waffles is already a great dish but when you make the waffles red velvet, you take this dish to another level! This is normally my go-to brunch dish whenever my husband and I go to a restaurant. My husband’s favorite cake was red velvet until he found out that red velvet is chocolate cake with food coloring LOL. He is not a fan of chocolate cake so, now its carrot cake. Once he tried these, he went back to red velvet being his favorite. Yes, red velvet is a chocolate cake base with buttermilk, apple cider vinegar and red food coloring. To make this recipe simple, I used boxed “just add water” buttermilk pancake/waffle mix. It has the normal ingredients you would use for a waffle so I just skipped a few steps and used the pre-mix. It is just as good, if not better.

In a mixing bowl, add 2 cups of pancake/waffle mix, 1 tbsp cocoa powder, 1/2 tsp of apple cider vinegar, 1 1/3 cup of milk, 1/2 tbsp of sugar and 3-5 dashes of red food coloring, depending on how red you want the batter.

Grease your waffle maker with some cooking spray. Pour 2 cups of batter in the waffle maker.

Add some powdered sugar to the waffle.

For the fried chicken, I used my recipe for Fried Chicken but instead of the whole chicken, I only used chicken breasts strips.

Add the chicken on top of the waffles and ENJOY!

Buttermilk red velvet waffles topped with homemade fried chicken!

Ingredients

  • 2 cups buttermilk pancake/waffle mix
  • 1 tbsp cocoa powder
  • 1/2 tsp apple cider vinegar
  • 1 1/3 cup milk
  • 1/2 tbsp sugar
  • 3-5 dashes of red food coloring

Instructions

  1. In a mixing bowl, add pancake/waffle mix, cocoa powder, apple cider, vinegar, milk, sugar and food coloring in a bowl. 
  2. Mix well.
  3. Add 2 cups of batter to a waffle maker.
  4. Cook 2-3 minutes until the waffle is cooked on both sides.
  5. Remove the waffle and repeat steps until all of the batter is used.
  6. Top with powdered sugar and fried chicken.
  7. ENJOY!
