Carrot Cake Pancakes
Carrot cake is literally my Husband’s favorite cake. So when I surprised him for a birthday brunch and made these, he was in food heaven. These pancakes have all of the ingredients of a carrot cake so you will never taste the difference. At least you wont feel bad for eating a whole pancake instead of a whole slice of cake. For these pancakes I used a buttermilk “just add water” pancake/waffle mix. These are great to use since it has all of the ingredients you would normally use for a pancake made from scratch. It just makes it easier! First, chop 1/3 cup of pecans and shredded carrots.
To a mixing bowl, add 2 cups of pancake/waffle mix, 1 tbs cinnamon, chopped pecans, chopped carrots, 1/2 tbsp sugar and 1 1/3 cup of milk. Mix well.
To a greased griddle pan, add 1-2 cups of batter, depending on how big you want the pancakes. Cook 1-2 minutes on each side or until the pancakes are completely cooked.
Repeat steps until all of the batter is used. To a separate mixing bowl, add 4 oz softened cream cheese, 1/4 cup powdered sugar, 1/4 cup milk and 1 tsp maple syrup. To soften the cream cheese, add it to the microwave for 20 seconds. Mix the ingredients together with a whisk. Pour on top of the pancakes. ENJOY!

Ingredients
- 2 cups of pancake/waffle mix
- 1 tbsp cinnamon
- 1/3 cup chopped pecans
- 1/3 cup chopped shredded carrots
- 1/2 tbsp sugar
- 1 1/3 cup milk
- 4 oz cream cheese
- 1/4 cup powdered sugar
- 1/4 cup milk
- 1 tsp maple syrup
Instructions
- In a mixing bowl, add the pancake/waffle mix, cinnamon, chopped pecans, chopped carrots, sugar and milk. Mix well.
- Add 1-2 cups of batter to a greased griddle pan.
- Cook 1-2 minutes or until the pancakes are completely cooked.
- Repeat steps until all of the batter is used.
- In a mixing bowl, add 4 oz softened cream cheese, powdered sugar, milk and maple syrup.
- Mix well using a whisk.
- Pour over the pancakes.
