Pumpkin Spice Loaf
After I posted the Lemon Loaf, I had so many people request the Pumpkin Spice Loaf and of course I had to make it. It is officially Fall and this is the perfect easy and delicious dessert. My Daughter is obsessed with Fall decor and spice smells, so she immediately ate this cake. I wasn’t a fan of pumpkin, I guess because I am so use to sweet potatoes but after making and tasting this cake, it has officially changed my mind. For this recipe, I used a box spice cake mix. Again, you are more than welcome to make this cake from scratch but since I am all about easy recipes, I used box cake mix. Grab your favorite spice cake mix.
Even though this is a boxed cake mix, you still want to make sure to separate the wet and dry ingredients. In a bowl, add 3 eggs, 1 cup of whole milk, 1/2 cup of canola oil, 1/8 tsp of vanilla extract and 1/2 of 15 oz can of pumpkin puree. Feel free to add more if you like a stronger pumpkin flavor. Whisk well.
To the wet mixture, add the cake mix and whisk well.
Grease a loaf pan with cooking spray.
Add the batter to the greased loaf pan and put in a 350 degree oven for 35-45 minutes or until the cake is fully cooked.
Remove the cake from the oven and allow it to cool completely.
In a bowl, add 1/2 bar of softened cream cheese, 1 cup of powdered sugar and 1 tbsp of whole milk. Whisk well until the icing is creamy.
Pour the icing over the cake.
Slice the cake into 1 inch thick slices. Serve and ENJOY!
Pumpkin Spice Loaf
Ingredients
- 1 box spiced cake mix
- 3 eggs
- 1 cup whole milk
- 1/2 cup canola oil
- 1/8 tsp vanilla extract
- 7.5 oz canned pumpkin puree (1/2 of can)
- 4 oz softened cream cheese (1/2 of bar)
- 1 cup powdered sugar
- 1 tbsp milk
Instructions
- Pre-heat oven to 350 degrees.
- In a bowl, add eggs, milk, canola oil, vanilla extract and pumpkin puree and whisk well. Optional: add the whole can of pumpkin puree for a more pumpkin flavor.
- Add the boxed cake mix to the wet ingredients and mix well.
- Grease a loaf pan and pour the batter into the pan.
- Add the cake to the oven and cook for 35-45 minutes or until the cake is fully cooked.
- Remove from the oven and allow the cake to cool completely.
- Once the cake is cooled, pour the icing on top of the cake.
- Cut into slices. Serve and ENJOY!
- In a bowl, add cream cheese, milk and powdered sugar.
- Whisk well until the icing is creamy. Add more milk if needed for a creamier texture.
- Pour on top of the cake.
