Roasted Asparagus
Roasted Asparagus
Whenever you need an easy and flavorful vegetable side dish, this is my go-to. Roasted vegetables are always good but adding a hint of lemon takes it to the next level. Grab a bundle of asparagus, wash and cut the ends off. You can use the rubber bands as a guide. The ends are always hard and bitter and you want to make sure to remove them. Preheat the oven to 375 degrees.
Add the asparagus to a baking sheet and toss them in 1 tbsp of vegetable oil. Season them with 1/2 tbsp garlic salt, 1/2 tbsp paprika, 1/2 tbsp lemon pepper and 1 tsp of parsley flakes. Cook in the oven for 25 minutes.
Grab one lemon and a zester. Zest 1/4 tsp of lemon peel, make sure not to zest the white part of the lemon. The white part is very bitter. Remove the asparagus from the oven and top with the lemon zest.
Serve with your favorite main dish and ENJOY!
