Tuscan pasta w/Shrimp
By now, you know that I am a huge fan of pasta dishes. Pasta is literally my favorite! If you have a dinner party and not sure of what to make, cook pasta, it is easy to make and can feed a large quantity of people. I know you are wondering what makes this pasta “Tuscan”, well it is the ingredients and the history behind it. Tuscan food is based on the Italian idea of “poor cooking” which is a way of saying “inexpensive and can be made in large amounts.” Also, sundried tomatoes are commonly used in Tuscany. This dish includes sundried tomatoes and spinach. Can we say YUM???? Boil rigatoni pasta according to the package instructions.
While the pasta is boiling, peel 1 pound of shrimp and season with 1 tsp of onion powder, 1 tsp paprika, 1/2 tsp parsley, 1/2 tsp garlic powder, 1/2 tsp red pepper flakes.
In a pan, add 1 tbsp of butter and the shrimp. Cook 5-7 minutes or until the shrimp has turned a light pink color.
Once the shrimp are cooked, remove and add 1 tbsp of butter and 1/2 tsp minced garlic to the same pan.
Add 1 cup of fresh spinach and 1/2 cup of sundried tomatoes. Cook for 5 minutes or until the spinach as started to decrease in size.
Add 3 cups of heavy cream, 1/3 cup of shredded parmesan cheese and 1/2 tsp red pepper flakes.
Cook for 15-20 minutes on medium heat or until the sauce thickens. Add 5 cups of rigatoni pasta to the sauce and toss.
Add the shrimp and cook for another 5 minutes. Serve and ENJOY!

Ingredients
- 5 cups of rigatoni pasta
- 1 lb shrimp
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp parsley
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes
- 2 tbsp butter
- 1/2 tsp minced garlic
- 1/2 tbsp salt
- 3 cups heavy cream
- 1/2 cup sundried tomatoes
- 1 cup fresh spinach
- 1/3 cup shredded parmesan
Instructions
- Cook the rigatoni pasta according to the package directions.
- Peel the shrimp and season with onion powder, paprika, parsley and garlic powder.
- In a pan, add 1 tbsp of butter and the shrimp.
- Cook for 5-7 minutes or until the shrimp has turned a light pink color.
- Remove the shrimp and set aside.
- In the same pan, add 1 tbsp of butter and 1/2 tsp of minced garlic. Cook until the butter has melted.
- Add 1 cup of spinach and 1/2 cup sundried tomatoes. Stir and cook for 5 minutes.
- Add 3 cups of heavy cream, 1/3 cup of parmesan cheese and 1/2 tsp of red pepper flakes.
- Cook for 15-20 minutes on medium heat or until the sauce has thickened.
- Add 5 cups of rigatoni pasta to the sauce. Toss and make sure the pasta is coated evenly. Add the shrimp and cook for another 5 minutes.
- Top with extra parmesan cheese.
- Serve and ENJOY!
