Crab Fries

Homemade fries was one of my Mother’s favorite snacks to eat. She would make them and then dip them in syrup. The sweet and saltiness was her favorite. As a kid, syrup and fries sounded gross lol. Homemade fries are always better than the frozen, pre-made ones. To enhance the fries, I decided to make a homemade cheese sauce and then add crab meat. These are definitely next level fries! You will not find these at any fast food restaurant. Start by washing 4 medium sized Russett potatoes.

After they are washed, cut the potatoes into wedges and then strips. If you have a fry cutter, thats even better!

Soak the potatoes in cold water for at least 1 hour. Soaking them in cold water removes the excess starch which will allow the fries to get crispy.

After the fries are done soaking, remove them from the water and dry them completely. If not, the excess water will cause the oil to pop whenever you start frying them. Fill your cast iron pan about half way with vegetable oil. Once the oil has reached a temperature of 350 degrees, add the fries.

Cook 8-10 minutes or until the fries are golden brown. Remove from the oil and add to a paper towel lined baking sheet to drain any excess oil. Season the fries with 1 tsp cajun seasoning, 1 tsp garlic salt and 1 tsp paprika as soon as you add them to the baking sheet.

In a sauce pan, add 2 tbsps of butter. Once the butter has melted, add 2 tbsps of flour. Whisk until it turns into a paste.

Add 1 1/2 cup of whole milk and whisk.

Add 1 cup of shredded white cheddar cheese and stir.

Stir until the cheese is fully melted and the sauce has thickened. Add 1 can of lump crab meat.

Season the cheese sauce with 1 tsp of Old Bay seasoning.

Put the fries into a baking dish and pour the cheese sauce on top.

Top with 1 cup of shredded yellow cheddar cheese. Add to a 375 degree oven for 15-20 minutes.

Remove from the oven and top with green onions. Serve and ENJOY!

Ingredients

Homemade Fries
  • 4 Russett potatoes
  • 2 cups vegetable oil
  • 1 tsp garlic salt
  • 1 tsp paprika
  • 1 tsp cajun seasoning
Crab Cheese Sauce
  • 1 4 oz can lump crab meat
  • 2 tbsp flour
  • 2 tbsp butter
  • 1 1/2 cup milk
  • 1 cup white cheddar cheese
  • 1 cup yellow cheddar cheese
  • 1 tsp Old Bay 

Instructions

Homemade Fries
  1. Wash the russet potatoes with the skin on.
  2. Cut into wedges and then into thin strips.
  3. Soak the potato strips into water for at least 1 hour.
  4. Heat vegetable oil in a cast iron skillet.
  5. Remove and dry the potatoes. Make sure they are completely dry.
  6. Once the oil is hot, add the fries to the pan.
  7. Cook 8-10 minutes or until golden brown.
  8. Add the cooked fries to a baking sheet.
  9. Season with garlic salt, paprika and cajun seasoning.
Crab Cheese Sauce
  1. Melt 2 tbsp butter in a pan. 
  2. Add 2 tbsp flour and whisk.
  3. Add 1 1/2 cup milk and stir.
  4. Add 1 cup of white cheddar cheese.
  5. Once the sauce has thickened, add the crab meat.
  6. Stir and season with Old Bay.
  7. Pour the cheese sauce on top of the fries.
  8. Top with the yellow cheddar cheese.
  9. Bake in a 375 degree oven for 15-20 minutes.
  10. Remove from the oven and top with green onions.
  11. Serve and ENJOY!
