Arugula Salad
My favorite salad is a Caesar salad with Romaine lettuce but lately, Arugula salads have been coming into a close favorite. I love the peppery flavor Arugula lettuce gives and the homemade dressing brings the salad all together. For some crunch, I added walnuts but you can use your favorite type of nut. Start by washing your Arugula lettuce and add it to a bowl.
In a bowl add 1/2 cup of olive oil, 1 tbsp of lemon juice, 1 tsp of honey and salt & pepper (to taste) and whisk well.
Add 1/2 cup of walnuts to the salad.
Add some shaved parmesan to the salad.
Pour the dressing on top of the salad and toss well.
Add additional salt & pepper and serve with your favorite main dish or a protein. Serve and ENJOY!

Ingredients
- 5 oz fresh baby arugula
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1/2 cup walnuts
- 1/2 ounce shaved parmesan
- salt & pepper (to taste)
Instructions
- Wash and dry the arugula and add it to a salad bowl.
- In a bowl, add olive oil, honey, lemon juice and salt and pepper and whisk well.
- Add walnuts and shaved parmesan to the arugula.
- Pour the dressing on top of the salad and toss well. Add salt and pepper (to taste).
- Top with extra parmesan cheese and serve. ENJOY!
